Rainy-day brunch café in Gongdo, Anseong: 7 breads to go, Chat Baker
In short
Chat Baker Brunch & Bakery Café is a brunch and bakery café of about 500 pyeong (a Korean floor-area unit) inside 512 Square in Gongdo-eup, Anseong, Gyeonggi. On a rainy day the writer drank Dongan Baekseo (동안백서), a collagen drink, then took home 7 breads, including a single-layer croissant, salt bread and a tomato basil cheese hotteok (filled griddle pancake), and tasted them again at home. Chat Baker is a Gongdo café for lingering over jazz and roomy seating rather than snapping photos and leaving.

What is Chat Baker, the brunch café in Gongdo, Anseong?
Chat Baker is a brunch and bakery café of about 500 pyeong inside 512 Square in Gongdo-eup, Anseong. I went because I love bread, but once I walked in, the space surprised me before the bread did.

I wondered whether Gongdo, Anseong really had a café with this kind of mood, and even at 500 pyeong it didn't feel like one of those big cafés that only brag about their size. I also came home with a ton of bread, and eating it again one by one, a few things kept coming back to me. In short: Chat Baker felt like a brunch café in Gongdo, Anseong where you want to stay a while, not one where you snap a few photos and leave.
Finding the Chat Baker entrance and the story behind the name
Chat Baker is deep inside 512 Square. When I heard "big bakery café" I expected a large standalone building, but the entrance is between Fahrenheit and Master Bunny. The green exterior quietly stood out.
The name is said to be inspired by the jazz musician Chet Baker. That might be why there are jazz performance posters, and the shop even has a separate LP corner. It isn't just a prettily decorated café; the whole space has its own story, and I liked that.

It's near Anseong Farmland and Lotte Mart, and only about 10 minutes by car from Starfield Anseong, so it fits nicely into a day out around here.

The shiny awards by the entrance 🏅🎖️ Chat Baker was well rated in the café/dessert category by the Korea Consumer Industry Evaluation in 2025 and again in 2026 👍

I thought it was only a bakery, but the menu is much more varied than I expected, from pasta, risotto and gnocchi to bingsu (Korean shaved ice). The dessert bingsu especially, wow~ the coconut fresh mango bingsu looks amazing. Next time I'm bringing the kids for bingsu.
What breads are in the Chat Baker bakery case?
Chat Baker has basics like croissants and salt bread, meal breads like tomato basil cheese hotteok and sausage pizza bread, plus cookies, cake slices and fresh milk shokupan. The first thing that caught my eye as I walked in was, of course, the bakery case. There are way more kinds of bread than I expected.

From basics like croissants and salt bread,

to meal-style breads like tomato basil cheese hotteok and sausage pizza bread, there was a wide selection.

Chat Baker reportedly makes its bread by hand every day and ferments it with natural sourdough, with no artificial additives.

They also say they use 100% milk butter, not margarine or blended butter, which bread lovers will probably be happy to hear.

Honestly, I only meant to buy a little at first.

But after one lap around the bread case, my tray got heavier and heavier. It always happens. At a bakery café, my plans don't matter much, haha.
The assorted cookies looked good for small gifts. You can also try a sample of the soufflé castella.

Cake slices, fresh milk shokupan... a bakery café that's honestly fun just to browse.

Don't forget to join the receipt event.
Why a 500-pyeong café like Chat Baker doesn't feel noisy
Chat Baker was quiet for a big café, thanks less to its 500-pyeong size than to its open space and wide gaps between tables. The space was too good to come just for the bread.

What surprised me most at Chat Baker was not the 500-pyeong size but how much breathing room there is. Some big cafés cram in as many seats as possible and feel chaotic when crowded, but here the tables are spaced widely and the space feels open.
Natural light pours in through big windows~ Since I came on a rainy day, the rain running down the glass wall was quite atmospheric. I thought the gray weather would be a letdown, but it actually matched the jazz mood. It felt less flashy and more comfortable for just sitting.
Chat Baker's second-floor seating and its different mood
The second floor of Chat Baker has plenty of seats, green views from the window side, and floor seating that works well with a child. Let's head upstairs. The mood changes again up there. First of all, it's just as relaxed.
There are plenty of seats, and the window side has a green view that looked great for sitting a long while. Opening a laptop alone wouldn't feel awkward, it's fine for a quiet chat for two, and it's easy to find a spot with family too.
With floor seating like this, it's also a good café to go with kids. I think those widely spaced seats are why this big café is oddly not noisy.

A QR code for ordering at every table is a nice touch too.
A jazz LP café in Anseong: the Chat Baker LP zone
The space I personally remember most at Chat Baker was the LP zone with jazz LPs and audio equipment. True to a café named after Chet Baker, jazz LPs and audio gear fill part of the space. They aren't just dropped there as photo props; they feel like the café's identity.

The smell of bread, jazz playing, rain falling outside the big windows. That combination stuck with me longer than I expected.
What is Dongan Baekseo, Chat Baker's collagen drink?
Dongan Baekseo is Chat Baker's collagen protein drink, available only iced. It reportedly contains 15,000mg of collagen plus protein, amino acids and vitamin C. The name caught my eye right away.
By name alone it sounds like a health drink, so I wondered if it would taste a bit bland, but it was nice and refreshing to drink by the window. When you keep eating different breads your mouth gets heavy, and sipping the drink in between felt much lighter.
The 7 breads I picked at Chat Baker on a rainy day
Here's what I picked at Chat Baker that day. Our choices were:
- Single-layer croissant (hangyeop croissant)
- Croissant
- Salt bread
- Tomato basil cheese hotteok
- Mocha bread
- Salt ciabatta
- Sausage pizza bread
I said I'd pick just a few, but I ended up grabbing everything I was curious about. Still, after trying several, each bread had its own personality, so the picking was definitely fun.

I thought it was only jazz LPs, but they even hold live performances and jazz festivals, a café really serious about music. The bakery items were packed neatly for takeaway.
Chat Baker salt bread, croissant and single-layer croissant
Chat Baker's salt bread isn't overly salty; a saltiness comes through a plain, mild bread flavor. Eating from the salt bread to the croissants, the salt bread has a smooth baked surface with salt sprinkled on top. It sticks to the basics and goes well with coffee.
The croissant had clearly defined layers. Crisp outside, tender and flaking along the layers inside, so it was satisfying even when I brought it home and ate it again.
The single-layer croissant in particular looked unique from the start. Its tightly coiled round layers were a different kind of fun from a regular croissant, and I remember the texture of tearing it apart along the layers.

Sausage pizza bread and tomato basil cheese hotteok
Chat Baker's sausage pizza bread is the kind kids would like, and it tasted even better lightly warmed at home. It's a combination that's hard to get wrong: big pieces of sausage with plenty of cheese and sauce on top. Salty sausage plus cheese made it feel more like a solid meal than a snack.
The tomato basil cheese hotteok (hotteok is a Korean filled pancake, usually sweet) is a totally different thing from the sweet kind you might imagine. It's closer to a savory meal bread with tomato, basil and cheese, so worth a look if you like that sort of thing.

Salt ciabatta and mocha bread from Chat Baker
Chat Baker's salt ciabatta looks quite plain on the outside, but when I cut it, the crumb inside had lively air pockets. Chewy but not too tough, easy to eat as is. Next to the flashier breads it might look ordinary, but this is the kind of bread you keep reaching for.
The mocha bread tasted familiar and comforting. A faint coffee aroma, good for when you crave something sweet.
Would I go back to Chat Baker, the Gongdo, Anseong brunch café?

Chat Baker is a café I want to revisit during brunch hours (11:00-20:00). The space is too good to go just for bread, and there's too much bread to go just for the space.
This time I focused on bakery items, but I hear there's also truffle mushroom cream risotto, mentaiko shrimp oil pasta and basil cream gnocchi, so I already have a reason to return. If you want somewhere to linger a bit longer rather than a quick stop near Anseong Farmland or Starfield Anseong, it's a good choice.
I came home with a big bag of bread, and eating it again at home I thought: next time, don't just buy bread, sit for a long while. That's my biggest reason for wanting to go back.
