With only 30 minutes before the next appointment, the writer ordered two Pyeongyang bibim makguksu at 12,000 won each, Pyeongyang jeopsi mandu (plate dumplings) at 8,000 won and nokdu bindaetteok (mung bean pancake) at 10,000 won, and found the buckwheat noodles and house sauce clean and mild rather than sharp. Bubyeokjeong Pyeongyang Mandu beat expectations enough that skipping the mandu hot pot and the free misutgaru dessert felt like a real loss.

I'd been out since morning and was heading to my last stop of the day for a live-stream shoot, with only about 30 minutes to spare. Wondering what to do, I spotted this really upscale-looking Pyeongyang dumpling place on the way and thought, let's go! It exceeded expectations, so I wanted to share it with you.

This is the gorgeous exterior of Bubyeokjeong Pyeongyang Mandu. The parking lot is pretty big too, so no need to worry about parking. I'd never tried Pyeongyang-style mandu before, so I was curious how it would be.

The restaurant is spacious and has an upscale feel, so it'd be great for bringing guests. Since it's over in the Paju area, I'd really recommend it as a stop if you're visiting Korea from abroad — after the DMZ, then Lotte Outlet or Heyri, this fits right into the route.

It was late in the day so no one was there when I visited, but during the daytime you can apparently watch the staff hand-making the dumplings here.

Self-serve corner and kid-friendly facilities

At the self-serve corner they had broth for the mandu hot pot and various kimchi ready to go. Seeing the kimchi made me crave the hot pot, but I was too short on time — so disappointing, ugh.

We were too short on time for the mandu hot pot, so we ordered 2 Pyeongyang bibim makguksu, mung bean bindaetteok, and Pyeongyang jeopsi mandu.

How does the Pyeongyang bibim makguksu taste?

Bubyeokjeong's Pyeongyang bibim makguksu is ₩12,000 and came piled high with perilla oil and ground perilla seeds. The nutty smell alone got my mouth watering.

It came topped with brisket and egg. I mixed it up with Bubyeokjeong's spicy special sauce, and it wasn't sharp at all — the buckwheat noodles and special seasoning were mild, soft, and really delicious. I usually mix in vinegar and mustard, but this time I wanted to taste the original flavor as it was, so I ate it plain. It got more addictive the more I ate, and I finished every last bit.

The Pyeongyang jeopsi mandu (plate mandu) came out as 4 pieces for ₩8,000.

Four plate mandu arrived, and eating them, they were mild and soft — a perfect match with the bibim makguksu. Made with bean sprouts, pork, and cabbage, they're said to recreate the clean flavor of traditional Pyeongyang mandu.

Nokdu bindaetteok pan-fried from raw mung beans

The mung bean pancake is made fresh every morning by soaking mung beans for 5 hours, grinding them raw at 100%, and pan-frying in lard the traditional way. Fresh off the pan, it was crispy yet deeply nutty — outstanding.

The takeout packaging was so clean and upscale.

As we were leaving after the meal, I noticed dessert was set out — misutgaru (roasted grain powder drink) and snacks. We were full and in a rush so we couldn't try it, but even down to that last moment, I could feel the warmth of how much care they put in. Definitely stop by Bubyeokjeong Pyeongyang Mandu at least once.
