Gangnam gukbap restaurant, clear offal broth: Namdo Changpyeong Gukbap

In short

Namdo Changpyeong Gukbap is a Korean restaurant between Yeoksam Station and Eonju Station in Gangnam, Seoul, specialising in clear-broth offal gukbap (rice soup). On a weekday visit at 11:30, the regular Changpyeong Market Gukbap came with meat alongside the offal, and dipped in perilla vinegared gochujang it tasted clean with no strong smell. For a light, non-greasy lunch in Yeoksam, Namdo Changpyeong Gukbap is a solid pick.

A full table setting with the stone bowl of Changpyeong Market Gukbap at Namdo Changpyeong Gukbap

Now that the weather's getting chilly, I've been craving something hot and soupy. I was out running errands in Gangnam and heard about a gukbap (rice soup) spot, so I stopped by. It's Namdo Changpyeong Gukbap, located between Yeoksam Station and Eonju Station — apparently a lot of office workers nearby come here for lunch.

What is the dining room at Namdo Changpyeong Gukbap like?

When you hear 'gukbap restaurant,' you might picture a cramped, old-school place, but Namdo Changpyeong Gukbap was clean and spacious overall.

Spacious dining hall with large tables at Namdo Changpyeong Gukbap

They said this big hall fills up completely at lunchtime. I went in around 11:30, and there were already people eating, with more streaming in afterward. Since the space is so large, it seemed like it'd be great for a group dinner too. There was also a time-sale menu from 6 to 7pm — a tasting portion of suyuk (boiled pork) plus a bottle of soju for ₩10,000. Seems like a good spot to swing by for the time sale after work.

Side dishes of kkakdugi, green onion kimchi, and salted squid

Which side dishes come with the gukbap?

After ordering, the gukbap arrived along with side dishes. The gukbap-restaurant essentials — kkakdugi (radish kimchi), green onion kimchi, and salted seafood. Crunchy kkakdugi alone would've been enough, but they threw in salted seafood and green onion kimchi too, three whole sides. The salted squid was an umami bomb scooped onto a spoonful of rice — the seasoning was seriously good.

How the clear broth of Changpyeong Market Gukbap tastes

The Changpyeong Market Gukbap arrives piping hot in a stone bowl, and just from the look of it I thought it was a plain bean sprout soup with no head meat or offal. But when I scooped with a spoon, it turned out to be packed with offal and meat. I'd assumed gukbap always meant a heavy, thick broth, but this clean, clear broth was actually easy on the stomach.

Why is the broth clear instead of milky?

To fully preserve the flavor of the raw ingredients, they apparently simmer it slowly over medium-low heat instead of a high flame. A clear, deep broth earned after a long wait! Maybe that's why the broth felt clear yet still deep.

Perilla vinegared gochujang for dipping meat and offal

They also gave us perilla vinegared gochujang for dipping the meat and offal. I fished out some pieces from the gukbap and dipped them lightly — the sweet-tart flavor plus the distinctive nuttiness of perilla went really well with the meat.

The meat and offal had no unpleasant smell at all — clean and tender. Sitting fully submerged in the broth, they weren't dry and were moist and easy to eat, with a subtle savory flavor from the meat itself that came through even better dipped in the perilla gochujang.

Offal can be hard to eat when it has a strong gamey smell, but this was trimmed so cleanly that the chewy texture and nutty flavor kept me reaching for more.

The Changpyeong Market Gukbap is made up entirely of offal, so if you can't eat offal, the kimchi-jjim (braised kimchi) might be a better order.

Stir in the dadaegi (chilli paste) for a spicier broth

There's dadaegi (spicy chili paste) mixed into the gukbap, so if you stir it in partway through, the clear broth turns into a spicy, punchy one. Worth trying both flavors. And if you add more perilla powder as you eat, it gets even deeper and nuttier.

Special vs. regular Changpyeong Market Gukbap: what's the difference?

I ordered the regular Changpyeong Market Gukbap, and there's actually a difference between special and regular. The special comes with meat, sundae (blood sausage), and offal all together, while the regular has only offal. I don't eat sundae, so I went with regular and got to enjoy the offal together with meat.

At the end, I mixed in rice with kkakdugi on top and finished it off completely. Unlike a greasy gukbap, it was nice to have a clear one — that was the appeal of Namdo Changpyeong Gukbap.

Is Namdo Changpyeong Gukbap worth it for a Yeoksam lunch?

The wall was covered in autographs from celebrities. After eating, I could see why. For anyone near Yeoksam or Gangnam looking for a solid lunch spot, or anyone wanting a hot bowl of gukbap to cure a hangover, I'd recommend Namdo Changpyeong Gukbap.
