Instructions for how to best enjoy Onjeongban's shabu-shabu

Since it was my first visit, I checked out the instructions for how to eat it best, and the system and setup are clean and straightforward!

Self-serve gondeure rice: take it before the broth boils

At Onjeongban's self-serve bar, gondeure rice (herb rice) is unlimited, and you can also help yourself to geotjeori kimchi (fresh-tossed kimchi) and sauces. Genuinely delicious...😋 Honestly, this spread doesn't make sense for the price.

A bowl of gondeure rice topped with seasoning sauce

⭐️Be sure to grab the gondeure rice before the broth starts boiling. You don't have to sit there blankly waiting for the shabu-shabu broth to boil ㅋㅋ Just top the fragrant gondeure rice 🍃 with a bit of seasoning sauce and mix — the gondeure rice itself is genuinely delicious 🍚. We also each grabbed a bowl before the broth boiled, and we nearly filled up on gondeure rice before the shabu-shabu even came out 🤣 The kimchi is geotjeori style too, so it pairs perfectly with Onjeongban's dishes.

Prices at Onjeongban: shabu kalguksu 11,000 won, gulrim mandu hot pot 13,000 won

Onjeongban's main dish is shabu-shabu kalguksu — the Onjeongban Shabu Kalguksu is ₩11,000, and the handmade gulrim mandu (rolled dumpling) hot pot is ₩13,000. What we ordered was the gulrim mandu hot pot at ₩13,000 per person, and we added meat to that.

These days even a decent lunch easily runs over ₩10,000, but here you get shabu-shabu with vegetables and meat, kalguksu noodles, plus unlimited gondeure rice and geotjeori — personally, the phrase "great value spot in Byeollae" fit perfectly 👍🏻 And the portion is seriously huge....🥟🥟

Spicy broth with half-meat, half-kimchi gulrim mandu

We ordered the gulrim mandu half meat, half kimchi 🥟🥟. My personal preference is kimchi mandu, but with meat available, you've got to try both.

We went with the spicy broth, and among the soup dishes I've had recently, this one ranks among the best 😋 (You know that feeling of a hangover cure a few days after drinking...?) It's not just spicy and sharp — with all the vegetables packed in, as it boils longer ⭐️ the natural sweetness and refreshing taste from the vegetable stock pairs really well with the spicy broth. It's the kind of broth that gets even tastier the longer you simmer the vegetables and meat, more so than on the first sip 🥄

Once it starts boiling, in go the meat and dumplings — man, the visuals are top tier...

Thin-wrapped kimchi gulrim mandu

I'm usually not a fan of thick dumpling wrappers, but Onjeongban's gulrim mandu wrapper is really thin! The surprising part is that even after simmering in the broth for a while, it doesn't easily fall apart or break down. The wrapper is thin but the filling is packed in, and you could really taste the filling in both the meat and kimchi mandu.

✅ Especially when you dip the gulrim mandu into the spicy broth, the broth's flavor seeps into the dumpling a bit and it's really delicious. I came for the shabu-shabu but left remembering this as a Byeollae dumpling spot.

Fresh kalguksu noodles added into the hot pot broth

Fresh kalguksu noodles, geotjeori kimchi and a fried rice finish

After fishing out the vegetables, meat, and dumplings, we dunked the kalguksu noodles into the broth — the noodles can also be swapped for sujebi (hand-torn dough soup). The kalguksu isn't dried noodles but fresh-made ones, and the curly fresh noodles cling to the broth nicely, so it's light and delicious without feeling heavy 🍜

✅ Onjeongban's geotjeori was also a highlight and paired well with everything — the crunchy napa cabbage texture stays intact and the seasoning isn't too strong or sweet, so it went well with the gondeure rice and was also great as a side bite between spoonfuls of shabu-shabu.

We finished off with self-serve fried rice or porridge — everything was so good we ate it all the way through!

Plenty of vegetables, decent shabu meat 🍃🥓, a spicy broth you can't stop dipping into, free gondeure rice, tasty geotjeori, and handmade gulrim mandu. The expression that fits best here is a place that nails price, portion, and taste all at once 👍🏻

Is Onjeongban worth it for shabu-shabu in Byeollae?

Personally, out of the shabu-shabu I've had recently, Onjeongban's spicy broth stuck with me quite a bit, so I'd like to visit again with family next time. If you're looking for a good restaurant in Byeollae, a great value spot in Byeollae, or a shabu-shabu place in Byeollae when you're craving hot soup, I'd recommend giving Onjeongban a try!

✅ Especially if you love gulrim mandu, definitely order it :)
