Nampo-dong tripe grill, weekend queue moved to sister shop: Bupyeong
In short
Bupyeong Yang Gopchang (부평양곱창) is a beef tripe and intestine grill restaurant on Nampo-dong's Yang Gopchang Alley in Jung-gu, Busan, and it has opened a second branch. After a walk-up queue on a weekend evening, the writer was directed to Bupyeong Makchang, which has the same menu and prices. There, two people shared the signature small seasoned stone pan, plus udon noodles and fried rice. If the long wait at Bupyeong Yang Gopchang puts you off, Bupyeong Makchang serves the same seasoned stone pan with the same open-air street-stall atmosphere.

Where is Bupyeong Yang Gopchang on Nampo-dong's Yang Gopchang Alley?
Bupyeong Yang Gopchang (부평양곱창) is a famous beef tripe and intestine grill on Nampo-dong's Yang Gopchang Alley in Busan, famous enough to already have a second branch. I go to this alley 2–3 times a year on every Busan trip, but this was my first time at Bupyeong Yang Gopchang 〰️🏃🏻♀️

Even in the summer heat there was a queue, it was that busy 👥 The smell of grilling gopchang filling the whole alley and the street-stall vibe were so charming 〰️ 🍻

Just go straight from Jagalchi Station Exit 3 and you'll get there 📍 Kkangtong Market is nearby too, so maybe that's why the alley was packed with people on a weekend evening!
How does the weekend queue work at Bupyeong Yang Gopchang?
There's no waiting list; you just queue on the spot ⏳ The place is big and tables turn over fast, so we got in quickly, but we were guided not to the Bupyeong Yang Gopchang shop itself but to the Bupyeong Makchang (부평막창) shop instead! 💁🏻♀️

Side dishes at Bupyeong Yang Gopchang
The sides were simple and clean: dried radish-greens soybean paste soup, pickled onions, fresh kimchi (geotjeori) and cabbage salad 🥢 The warm soup was nice to sip between bites, and the pickled onions and kimchi cut right through the greasiness of the daechang (beef large intestine) 👍
The cabbage salad dressing in particular was creamy, so it softened the stone pan's seasoning a little! 🥗

Bupyeong Yang Gopchang menu and how much two people ordered
The menu has three main items: salt-grilled / seasoned stone pan / hotpot 💬 No hesitation, I ordered the signature seasoned stone pan! We planned to add noodles and fried rice, so the two of us went with the small size, and the amount was just right haha 😌
With a bigger group, a small salt-grilled plus a small hotpot would be a nice mix too!

It was so popular that the queue kept going the whole time we ate 🔥
Bupyeong Yang Gopchang vs Bupyeong Makchang: is there a difference?
Whether it's Bupyeong Yang Gopchang or Bupyeong Makchang, the menu, setup and prices are the same, so if a long wait bothers you, I recommend eating at Bupyeong Makchang like I did! ⭐️
How does the small seasoned stone pan at Bupyeong Yang Gopchang taste?

The stone pan comes out evenly coated in red seasoning 🥘 Daechang, yang (beef tripe) and yeomtong (beef heart) come loaded in, along with vegetables like mushrooms, onions and potatoes 〰️

You just sit there and a staff member grills it for you. As it cooks, the red seasoning soaks into the daechang and the daechang fat rises up, and it looked so appetizing.. 🤤🌶️

The nutty fat from the plump daechang plus the garlicky seasoning meant one bite and I was fully fat-charged 〰️ 💪
The seasoning isn't as spicy as it looks, and it's more garlic and savory depth than sweetness, which pairs perfectly with the rich daechang! 🧄

Picking between daechang (large intestine), yang (tripe) and heart
Yang with its chewy yet crunchy texture, and yeomtong, which was milder than the daechang! Each has its own charm, so picking and choosing was fun 🎶
Still, my number one pick is the nutty, fatty daechang ❤️🔥

Not ordering soju with this combo is cheating 🚨❌ Nutty daechang, deeply savory seasoning and that street-stall mood, and a glass of soju just came to mind on its own haha 😵💫

Are the noodle add-ons and fried rice at Bupyeong Yang Gopchang worth it?
The add-on noodles (sari) come in udon, glass noodles or bunmoja (tteokbokki-style rice cake noodles). After eating for a while, I added udon ✔️ Chewy udon in savory red seasoning could not possibly be bad! 👏

Top the seasoning-soaked udon with nutty daechang and yum! Next time I'll try adding bunmoja ✊

As always, a Korean meal ends with fried rice 🍚 Made with the leftover seasoning, it gets crispy 〰️ and scraping up the stuck-on bits is half the fun. The seasoning is so good that you should absolutely order the fried rice‼️
Bupyeong Yang Gopchang in Nampo-dong: the verdict
From the street-stall mood of Nampo-dong's Yang Gopchang Alley to the generous seasoned stone pan, I was happy with Bupyeong Yang Gopchang 🔥 Noodles and fried rice made it a perfect finish 〰️
