Gunsan gopchang hot pot set at Makchang Ilbeonji restaurant

If you’re going out for gopchang (beef small intestine) in Gunsan, there’s a place that brings it in directly from the slaughterhouse every dawn.

I visited Makchang Ilbeonji (막창일번지), a popular Gunsan gopchang spot that has built up regulars over more than 10 years.

Makchang Ilbeonji location and parking
You can use the dedicated parking lot to the right of the building or park in front of the restaurant. The public parking lot beside Twosome Place Naun Branch, a two-minute walk away, is also free to use. Its address is 123 Susong-ro, Gunsan-si, Jeonbuk Special Self-Governing Province.

A spacious restaurant for group gatherings
The restaurant is spacious, so it is comfortable for group get-togethers or company dinners too. It is a great size for settling in for an evening at a Gunsan bar or meat restaurant. Having been open for more than 10 years, it has many regulars, and the tables are often full at dinner time.

They bring in beef intestines directly from the slaughterhouse every dawn, and the owner personally trims them through the morning. That is why they arrive at the table fresh and chewy, without the characteristic odor of gopchang. The basic side dishes even include seonji (congealed ox blood), cheonyeop (tripe), spinal cord, and lung pancakes—there are so many that customers joke, “Is this a baekban restaurant?” haha

Makchang Ilbeonji Set A: ₩50,000
It includes gopchang, makchang (beef abomasum), daechang (beef large intestine), hongchang, heart, and hot pot. At 450g, it is a generous set.

The owner put the meat on the grill for us.

The gopchang was tender and packed with filling, so each bite burst with rich, nutty flavor.

The makchang was thick and satisfyingly chewy, while the daechang had a full, fatty richness that paired perfectly with soju.

Hongchang and heart each had a different chew, so there were all kinds of textures to enjoy on one plate.

The heart of the set: gopchang hot pot
The hot pot is really the star. The hot pot included with the set is loaded with gopchang.

The longer it boils, the richer the broth becomes, and the gopchang inside cooks up wonderfully tender.

There is a reason this place’s hot pot is often mentioned when people talk about Gunsan gopchang hot pot. Finishing it by mixing in a bowl of rice is seriously filling.

Why it has been loved for 10 years
The beef intestines are brought directly from the slaughterhouse every dawn. They say Makchang Ilbeonji is the only place in Gunsan run this way. Fresh beef intestines do not have that distinctive unpleasant odor. Being able to eat without worrying about the smell is also why I would recommend it to first-time gopchang eaters.
Overall
With hot pot included in a 450g set, there is plenty in both quantity and flavor. Since the intestines are brought in and prepared directly from the slaughterhouse every dawn, they are fresh without any unpleasant odor. It also works well as a place for an evening gathering at a Gunsan bar or meat restaurant.
