I went with the recommended clear mushroom broth and chose a serving each of prime Angus chuck flat and grade-1 black pork belly.

The clear mushroom broth was clean and not artificial-tasting at all.

As soon as the broth started boiling, they added napa cabbage, bean sprouts, green onion, assorted mushrooms, and chewy glass noodles (bunmoja). All the vegetables mingled together to deepen the broth's savory flavor.

The prime Angus chuck flat had gorgeous marbling — the quality really looked great.

I dipped the chuck flat briefly and tasted it — no gaminess at all, and it melted, savory and tender, the more I chewed.

How did I eat it with the sauces?

Mixing minced chili and garlic into the soy sauce they provided gave a spicy kick that paired perfectly with both the meat and vegetables.

The other chili sauce and peanut sauce were really delicious too.
