The ingredients behind the jeon
According to the restaurant, Gwibinjeon sources fresh ingredients daily from Banyeo Agricultural and Fisheries Market, Gupo Market, and a Cheolma Korean beef shop. Jeon is pan-fried after you order and served warm, with care taken to keep the natural, clean flavor of the ingredients rather than an oily finish.
What's on the menu at Gwibinjeon Hwamyeong?
Beyond the assorted platter, Gwibinjeon offers a range of dishes to pair with jeon, including Jirisan black pork bossam, Korean beef yukhoe (raw beef), golbaengi noodle salad, whale-brand fish cake soup, and pork kimchi jeongol (hot pot). Sweet, smooth handmade makgeolli in flavors like strawberry, honey pear and banana is also a signature — pick to your taste.

How do the 8 kinds of Gwibin assorted jeon taste?

The Gwibin assorted jeon platter arrived neatly arranged on a large plate with all eight kinds: Korean beef jeon, shrimp jeon, pollock jeon, kimchi jeon, zucchini jeon, meat-perilla leaf jeon, meatball jeon and tofu jeon.
The golden-brown color looked appetizing, and with so much variety, it was fun to pick one at a time.
The Korean beef jeon was thin and tender with a subtle nuttiness, while the shrimp jeon kept a springy, bouncy shrimp texture.

The pollock jeon and tofu jeon were mild and comforting, and the meat-perilla leaf jeon balanced the perilla aroma with its filling nicely.

The meatball jeon was thick and nutty, while the zucchini jeon was moist and soft. The kimchi jeon had a light spiciness that refreshed the palate between the milder jeon.

Getting to try so many kinds of jeon on one plate made this feel like a great Hwamyeong-dong favorite to visit with people who have different tastes.

Dipping the jeon lightly in the accompanying onion soy sauce adds a savory, salty depth.

Wrapping the jeon with the lettuce in the center of the plate kept the nutty flavor while making each bite feel fresher.

Does the golbaengi somyeon noodle salad go well with jeon?
Gwibinjeon Hwamyeong's golbaengi (whelk) noodle salad is said to be generously made with seasonal vegetables, thin wheat noodles (somyeon), and a full can of whelk.

It's plump whelk, crisp seasonal vegetables and soft noodles tossed in a spicy-sweet handmade sauce.
The tangy, sweet, subtly spicy handmade sauce coated the chewy whelk and crunchy vegetables evenly.

Tossing the noodles gently in the sauce and eating them with the whelk lets the spiciness cut cleanly through the nuttiness of the jeon.

Chewy whelk and evenly sauced noodles made a great combination with the assorted jeon platter. We paired all of it with Tiger raw makgeolli and Coke Zero.
