Sindang-dong beef intestine restaurant regulars love: Jinseong Hanwoo
In short
Jinseong Hanwoo Gopchang Sindang Direct Branch is a beef intestine restaurant in Sindang-dong, Jung-gu, Seoul, right outside Sindang Station Exit 7. A regular couple who long ago stopped counting their visits ordered 2 servings of gopchang (small intestine) and 1 serving of daechang (large intestine), with three house-made kimchis (altari radish, scallion and mustard leaf), stone-pot steamed egg and a signature minari sauce. Taste, atmosphere and service all line up, so Jinseong Hanwoo Gopchang is the first place the couple names when friends ask for a Sindang-dong recommendation.

Honestly, when people think of Sindang-dong, tteokbokki (spicy rice cakes) is usually the first thing that comes to mind... but I honestly think Jinseong Hanwoo Gopchang might be the real must-visit spot in Sindang-dong, even more than tteokbokki.
This is a place I love so much I've given up counting how many times I've been back! It's basically my go-to spot for a periodic oil refill, and it's also the first place I send friends without a second's hesitation when they ask for Sindang-dong restaurant recommendations.

How long is the wait at Jinseong Hanwoo Gopchang in Sindang-dong?
Jinseong Hanwoo Gopchang Sindang Direct Branch is right outside Sindang Station Exit 7. It's famous among Sindang-dong beef intestine restaurants for nailing both value and quality, so during peak hours there can be a wait — I always try to get there early. Weekends tend to have longer waits than weekdays, but if you arrive a bit before the dinner rush, you can usually get in without waiting.
Inside, there are round tables that give off a cozy pojangmacha (street tent bar) vibe, perfect for gathering close together and grilling gopchang with a cold beer.

Side dishes and the signature minari sauce
Once you're seated and order, the basic side dishes come out. The number of dishes here isn't huge, but every single one is done right.
My personal favorite: the signature sauce with finely chopped minari (water dropwort) and cheongyang chili! The salty, spicy sauce takes the richness of the gopchang and daechang to another level.

The chive salad is tasty on its own, but I'd recommend grilling it alongside the gopchang too.

I'm not drinking these days, but my husband said he couldn't just pass up such a delicious-looking spread, so he ordered beer and soju for a somaek (beer-soju mix).

Three house-made kimchis and stone-pot steamed egg
Another highlight of Jinseong Hanwoo Gopchang is the house-made kimchi trio — altari (young radish), scallion, and mustard leaf kimchi, haha. It's rare to find house-made kimchi at any gopchang restaurant, which is part of why I keep coming back here — the deeply fermented sourness of the kimchi cuts through the richness of the gopchang for a perfect pairing!

On top of that, a stone-pot steamed egg comes bubbling and soft as a default side too — warm and fluffy, it works as a drinking snack and also helps settle your stomach before diving into the gopchang.

A grill piled high with gopchang and daechang
Finally, the main event we'd been waiting for! The grill comes out packed edge to edge — a visual that lives up to Sindang-dong's reputation as a gopchang hotspot.

The chives, rice cake, onion, and extra rice cake layered on top of the gopchang and daechang come together beautifully. As a regular, I can confidently say it's hard to find gopchang and daechang this good unless a place is really skilled. And the price is such good value that it's impossible not to become a regular!

Staff grill everything with a timer
When it first comes out on the grill, it's not cooked yet, so staff turn the heat up to max and set a timer before walking away. When the timer goes off, they come back to flip everything well and cut the gopchang, daechang, and vegetables into bite-sized pieces.

Once it's well cooked, the staff let you know it's ready to eat, and then it's just a matter of digging in as much as you like.

3 servings for 2 people: how much gopchang vs. daechang?
Every time we go, we agonize over the same thing — ordering 3 servings for 2 people, should we get more gopchang or more daechang? The struggle is real because both are so delicious, haha. This time, since I've been on a diet (sort of), we decided to lean toward gopchang for being a bit less fatty, so we ordered 2 servings of gopchang and 1 of daechang.
After tasting the well-grilled gopchang and daechang, I couldn't help but think, 'Ugh... should we have gotten 2 servings of each?' Haha.

Taste, atmosphere, and service — Jinseong Hanwoo Gopchang Sindang branch nails all three. I'll definitely keep coming back regularly, though I'm a little scared that writing about it on my blog might bring in more crowds and longer waits... but I still hope more people go try this delicious place, so it keeps thriving and I can keep eating great gopchang and daechang here. Haha.
