Jeongja-dong aged meat restaurant, lamb racks with beef soup: Nokji

I heard there was a proper beef and lamb restaurant in Jeongja, so I went to check it out haha. Personally, when I pick a meat restaurant, using good meat matters, but I think a place really knows what it's doing only when an expert selects the meat AND grills it in the tastiest way. There was a spot that fit that exactly, so I visited this time. Today I'm introducing Nokji Bundang Jeongja Branch!

Even the exterior felt clean and upscale. The overall vibe was calm, quite different from a typical meat restaurant, so even before going in I got excited about really enjoying the meat haha.

Nokji is a place that ages meat at the optimal time and temperature to bring out a rich, deep flavor. Even the same cut can taste quite different depending on how it's aged and grilled. So I went in looking forward to the aging process and the tableside grilling.
Inside Nokji: interior mood and seating


The interior isn't huge, but it's comfortable overall and the seating layout is well organized. Since the tables aren't packed too closely, there's breathing room between them, which also seemed to make it easier for the staff grilling the meat to attend to guests. That kind of detail matters more than you'd think at a place where staff grill for you.

They also sell Suntory draft beer. You can't skip a draft beer with meat, right haha — though I had plans afterward that day, so I couldn't drink, sadly.

What we ordered: shoulder rack, French rack and beef jangteoguk


The menu ranged from à la carte items to set menus. You can enjoy both beef and lamb, and there's a range of spirits and sake, so it looked easy to pick a drink to match whatever meat you're having. After going back and forth, we ordered one portion of shoulder rack, one portion of French rack, and beef jangteoguk (market-style beef soup). We decided to properly enjoy both lamb and beef today haha.

After ordering, the basic table setting came out piece by piece. Each side dish was served in neat little portions, clearly done with care. In particular, the herring jeotgal (salted fermented herring) and doenjang siraegi (dried radish greens in soybean paste) served alongside were seasoned in a way that paired well with the meat.
The first dish out was the beef jangteoguk. One spoonful in, and I immediately thought this is the kind of taste that calls for a drink haha.

The broth had a savory depth, mixed with the earthy flavor of ugeoji (napa cabbage leaves), and I kept reaching for more even before the meat arrived. It seemed like the kind of broth that would also go great poured over rice.
Staff grill the lamb and rest it for you

And finally, the meat arrived! The color looked great the moment I saw it — clean-looking and clearly well-aged. Since today's order was the shoulder rack and French rack, I was even more curious how they'd taste.
One of the things I liked most about Nokji was that the staff grill the meat for you.


The staff member watched the state of the meat and grilled it piece by piece, so we could just relax and wait to enjoy it. They weren't just tossing it on the grill — they carefully checked the doneness the whole time.

After grilling it partway, they didn't serve it right away — they rested it first. After letting the inside cook through slowly, they grilled it once more and brought it to just the right temperature. Watching them check the meat all the way through to the final grill really showed the advantage of a place that grills for you.
Does the lamb taste gamey? First bite with just salt
I tried the well-grilled meat first with a light dip in salt. One bite in, and it was really juicy. There was plenty of juice, and most notably, there was zero gamey smell typical of lamb. So even though it was lamb, it was easy to eat without any hesitation, tasting clean and nutty almost like beef. I think both lamb lovers and people who usually hesitate because of the smell could eat this comfortably.

Once the meat was fully grilled, the staff cut it into bite-sized pieces and plated them for us. Thanks to that, we could eat it right away before it cooled down. Eating it piece by piece, the juiciness and the aged flavor came through even more.

Egg yolk truffle sauce with herring jeotgal and baek-kimchi
The egg yolk truffle sauce served alongside paired really well with the meat too. Dipping the meat lightly in the sauce, the soft egg yolk flavor combined with the truffle aroma made the meat's richness feel even deeper. It had a different appeal from dipping it in salt.
Next, I tried it with herring jeotgal and baek-kimchi (white kimchi). The savory, juicy meat combined with the salty herring jeotgal, and the cleanness of the baek-kimchi cut through any greasiness completely. It was a salty-yet-nutty combination that kept me reaching for more meat haha.
Mashed potato, basil pesto and cheese with the lamb


Next came mashed potato, which pairs well with the shoulder rack. I put a piece of meat on top of the soft mashed potato and tried it together — the rich flavor of the meat and the fluffy, soft potato went together surprisingly well.

After that came basil pesto and, I think, pecorino cheese?

The fragrant aroma of basil went better with the meat than I expected. Adding the nuttiness of the cheese made it even richer. It was fun realizing how the same meat could taste different depending on what you paired it with.
Finishing with intercostal lamb and minari
Finally, they cut off the intercostal meat attached near the bone and prepared it separately, serving it together with minari (water dropwort).


Topping a piece of meat with minari, the herb's fragrance cleanly cut through any richness. Thanks to that, I could finish the meal properly, tasting the nutty, deep flavor all the way to the last bite.
Is Nokji Bundang Jeongja Branch worth it?
Visiting Nokji Bundang Jeongja Branch reminded me once again why I think the grilling process matters just as much as the meat itself at a good meat restaurant. Selecting and aging good meat, then grilling it in front of you and resting it before serving, really let us enjoy delicious meat with zero effort. If you're looking for proper lamb in Jeongja, I think it's worth saving as a go-to lamb restaurant in Jeongja-dong!
