That day at Nokji Bundang Jeongja Branch, I ordered the aged fresh rib-eye galbi (200g) for two 68.0, beef market soup 10.0, and mentaiko-scallion rice 6.0.

Wasabi, herring roe, seasoned dried radish greens with doenjang, aged kimchi, soy sauce, and other side dishes that go well with meat are laid out neatly! You can add as much spicy cheongyang pepper as you like to Nokji's special soy sauce!

Aged fresh rib-eye galbi, 400g. The rib-eye galbi from the 6th–8th rib section, called the 'flower of galbi,' comes together with minari (water dropwort), scallions, onions, and shiitake mushrooms 〰️

Nokji only uses good-quality chilled meat, and applies different aging times and temperatures depending on the type and cut, so it's served at its most delicious state, they say!

At Nokji Bundang Jeongja Branch, staff grill everything from start to finish over the table's charcoal brazier, including the vegetables, to just the right doneness — so nice! Brushing the vegetables with olive oil while grilling boosts the flavor even more!

There's even a performance where staff run a torch along the rib-eye galbi bones to add a charred flame flavor -🔥

Midway through grilling, they cover the meat with a clear dome for a special resting process that traps in the juices ••!

Rib-eye galbi grilled to a delicious medium well! Once the galbi and vegetables were nicely grilled, they were moved to a mini brazier so they wouldn't burn and could be enjoyed warm -!

The five sauces: salt, herring roe, truffle soy, mashed potato, basil pesto

Dipping it first in salt brought out the rich, natural juices of the rib-eye galbi, filling my mouth with savory flavor!

Adding a bit of salty herring roe and wasabi on top of the galbi and scallions made for a really clean flavor combination!

Special soy sauce with egg yolk and truffle oil

Various sauces come out in order like a course! The sweet special soy sauce has egg yolk and truffle oil mixed in — just stir it well and dip!

The yolk makes the sauce even richer, and the truffle oil's aroma doubles, so dipping the meat in it was truly the best ໒ ꒱

Next up is the mashed potato with a strong butter aroma!

They grill the beef short rib meat together with minari — the chewy texture pairs perfectly with the fragrant minari and it's all around savory!

Last comes the basil pesto sauce! With so many sauces to pair with the meat, it's fun trying new combinations -!
