Minyeong Hwareo Gongjang Moraenae Market Branch
Today I'm writing up our review of Minyeong Hwareo Gongjang near Moraenae, the Japanese-style sashimi spot in Guwol-dong that my husband and I ate really well from over the weekend~ We tried it a few months back and it was so good that we went again this weekend to pick some up, haha.

Where is Minyeong Hwareo Gongjang Moraenae Market Branch, and how do you get there?
Minyeong Hwareo Gongjang in Moraenae, Guwol-dong is located inside Moraenae Market in Incheon. Get off at Moraenae Market Station and the market is right in front of you, so it's easy to find~!

Opens at 10am — sushi is ready even if you arrive at 10:30
Since it opens at 10, I visited a little past 10:30, and the owners had already prepared a lot of different kinds of sushi!

There's no seating inside for eating — it runs purely on takeout and delivery~ The owners prep the sashimi in what looks like an open kitchen setup, so you can pick it up feeling pretty reassured!

What comes with a takeout order: soup base and an ice pack
When you order takeout, they also give you broth, which you mix into 100ml of water. If you buy sushi or sashimi, they pack it with an ice pack too! They also sell mulhoe (cold raw fish soup) made with the shop's own special broth and same-day prepped fish.

What kinds of sushi does Minyeong Hwareo Gongjang sell?
They sell a ton of varieties — omakase sushi, 1-person sashimi, tuna sushi, squid sushi, garlic shrimp sushi, egg sushi, fried tofu sushi, soy-sauce shrimp sushi, freshwater eel sushi, tuna sushi, garlic salmon sushi, raw salmon sushi, large flatfish sushi, aged-kimchi flatfish sushi, engawa sushi, special mixed sushi, premium sushi and more. And if the sushi you're looking for isn't out, just tell the owner and they'll make it for you on the spot.

How the 1-person sashimi and special mixed sushi were packed
I picked up a 1-person sashimi platter and the special mixed sushi~ Same as last time, the packaging was really neat and I liked it! It arrives home perfectly intact without anything shifting around, haha!

The special mixed sushi has several different kinds of sushi packed in at once, so the lineup itself felt generous.

From white fish to fish with completely different colors, there was a nice variety, which made it fun to pick through piece by piece. And packing sashimi and sushi together made it feel like a whole spread set out on the table.

How the special mixed sushi tasted: the fish-to-rice ratio
With the sushi, instead of too much rice masking the fish flavor, the ratio between fish and rice felt just right, which I liked. The fish had a soft bite and a clean, light taste, and the tangy seasoning in the rice supported the fish flavor well, so overall it went down really cleanly.

The 1-person sashimi platter: an even spread of live-fish cuts
The 1-person sashimi wasn't just one kind of fish — it had a good even spread of several different kinds of fresh raw fish, which I liked because you get to try a bit of everything.

The sashimi looked clean and fresh overall in color, and I barely noticed any fishy taste when eating it.

It was light and clean but had a subtle sweetness that came through more the longer you chewed, and depending on the type, some pieces had a soft bite while others had a chewier texture, so I got to enjoy the difference in textures as I ate.

Soy sauce, wasabi and chojang: switching between sashimi and sushi
Just eating the sashimi plain was clean on its own, but dipping it lightly in soy sauce mixed with a bit of wasabi brought out the light, clean flavor even more, and dipping it in chojang (sweet-and-sour chili sauce) added a tangy-sweet kick for a different take.
In particular, eating sashimi first and then working through the sushi piece by piece was nice — even with the same fish, it tasted a little different once paired with rice.
The chewy, fresh texture of the sashimi paired well with the soft sushi rice, and I could adjust things to my taste along the way with soy sauce, chojang, or wasabi.
1-person sashimi plus special mixed sushi: when this combo works best
Overall, the 1-person sashimi is great for enjoying a variety of raw fish cleanly, and the special mixed sushi gives you a good spread of different sushi types, so I felt like it was a good call to pack both together. It works well eating solo, and it's also a fine combo for two people to split a little of each. It's a great pick for a day when you want to enjoy sashimi comfortably at home, so I think I'll stop by again next time I'm craving sashimi near Moraenae Market Station.
