The pork belly was a thick cut, with a good balance of lean meat and fat.

Once it hit the grill, the charcoal heat spread evenly through the meat, and it started sizzling appetizingly. We grilled it golden on both sides, then cut it into bite-sized pieces, flipping often so it wouldn't burn while we waited for it to cook through.
