I was wandering around near Sinnonhyeon Station with a friend when I suddenly needed bread, so we stopped by Bakerist Brown (BAKEST BROWN).

The red-brick exterior catches your eye right away — there are tables outside, and the inside combines a bakery space with a café, so it's great for having bread with a coffee.
Honestly, we only meant to pick a couple of things to try, but once we started looking at the bread we kept adding more and more... and ended up thoroughly eating our way through a sandwich, tomato basil bread, and mentaiko mayo salt bread haha.
To cut to the conclusion first: whatever you pick here is above average, and especially the mentaiko mayo salt bread — the friend who ate it flat out said, "This is the best salt bread I've ever had," calling it her salt bread of a lifetime.
Where is Bakerist Brown, and is the Sinnonhyeon Station side street easy to find?
Bakerist Brown is in a red-brick building on a backstreet near Sinnonhyeon Station, so it stands out quite a bit from its surroundings. "BAKEST BROWN" is written large near the entrance, so it wasn't hard to find, and the exterior alone gives off the feel of a small bakery you might stumble on in a European alley.


When the weather's nice, sitting at the outdoor tables to eat seemed like it would be great too.
Once you're inside, the layout is set up so you pick your bread first and enjoy it with a drink — the overall vibe was cute but comfortable, easy to just sit and relax in.
Gangnam Sand: the colorful sandwich cookies you spot first
The first thing that caught my eye at Bakerist Brown was, of course, the sand (sandwich cookies)! They come in pink, chocolate, orange, and matcha-green colors, so laid out on a plate they looked really pretty.

They're neatly shaped into squares, and it's not just that the colors differ — there's real fun in picking each one to try. Set next to the coffee they looked great, and it was nice being able to share a bunch of different flavors one at a time with a friend.

Sandwich cookies like this can be too much if they're overly sweet, but alternating bites with the bread made them feel just right as a dessert.
Tomato basil bread at Bakerist Brown, more my taste than expected
Personally, the tomato basil bread exceeded my expectations. The outside is a flaky pastry with visible layers, topped generously with roasted tomato and a hit of basil flavor, so it leaned more toward a savory, fragrant meal bread than a sweet dessert bread.

You can tell from the photo alone that the pastry surface was baked to a proper golden brown. The tomato turned juicy from roasting, and the contrast with the crisp pastry made for a great texture combination. There was a bit of cheese on top too, so the bright tomato flavor, basil, and cheese all came together without feeling heavy. I already love this tomato-plus-basil combination, so I really enjoyed it.
Mentaiko mayo salt bread, the standout of the visit
The strongest menu item at Bakerist Brown that day was the mentaiko mayo salt bread. Even just looking at it, the top of the salt bread is baked to a glossy golden brown, topped with mayo sauce and seaweed flakes — a combination that's hard to make bad haha.

The salt bread itself is salty and savory, and adding the mentaiko mayo really brought out the umami. I worried the mentaiko might make it too salty, but the mayo softened it, making it surprisingly easy to eat without feeling heavy.
And then the friend who came with me took one bite and said
This salt bread is seriously good. Is this the best salt bread of my life?
— that's how much she meant it haha. I took a bite too and understood exactly what she meant. The outside was slightly crisp and the inside moist and savory, so the base bread itself was delicious. It made me want to try the plain salt bread without the mentaiko mayo topping too.
Iced coffee and Einspänner with the bread
Since we'd picked out quite a lot of bread, we ordered drinks to go with it — and of course, coffee is a must at a bakery.




The iced coffee was great to sip between bites of bread, and we ordered the iced affogato-style espresso along with it to share. Especially after eating something salty like the mentaiko mayo bread, a sip of coffee cleared the palate and kept us going...haha.
The sand felt like dessert when paired with coffee, while the tomato basil bread and mentaiko mayo salt bread were more like brunch — piling a bit of everything onto one plate made for a pretty hearty meal.
Is Bakerist Brown worth it? The bread itself is the reason to go
With trendy bakeries these days, sometimes the visuals are pretty but the taste falls short once you actually try it. At Bakerist Brown, though, every piece of bread we had that day was delicious, so satisfaction was high.
The tomato basil bread was quite my type, and my friend's clear favorite was the mentaiko mayo salt bread! She's someone who already loves bread, so for her to call it her salt bread of a lifetime says a lot — if you like salt bread, it's worth trying.
If you're near Sinnonhyeon Station or Gangnam looking for a café with good bread, this is a place worth stopping by. Next time I'll try some of the other pastries I missed this time, along with the plain salt bread :)
