Today I'm writing about my visit to Jeju Eunhui-ne Haejangguk, the place I always end up at whenever I crave a spicy, clean broth.

The place that got me to mix rice into soup

Honestly, I'm not really a fan of mixing rice into soup. I like to taste each ingredient separately, so even at haejangguk (hangover soup) places I usually eat the broth and rice apart, or just fish out the solids neatly. On top of that, I never used to eat beef blood much because of its texture and smell... but strangely, at this place, I end up scooping up every last bit of beef blood and even mixing rice into the broth.

This is a well-known spot near Starfield Goyang that has held its ground near Samsong Station for a long time! Let me break down why I keep coming back.

The first thing that greets you are menu banners with a strong Jeju vibe.

Even during a late meal time, the place was buzzing with customers — you can feel why this is a popular Samsong spot.

We sat down and quickly scanned the set menu, though our minds were already made up haha. As always, we went with the ✔️Haejangguk + Dombe Pork Set (₩20,000) and added an extra ✔️Haejangguk single (₩12,000). At ₩20,000, you get top-tier dombe pork thrown in, so ordering the set is basically a must whenever we come here.

I couldn't just stare at the glossy, tender pork while waiting for the haejangguk, so we dug in right away. The ratio of lean meat to fat is just right, and it's very soft with zero gamey smell. Wrapped in cabbage with a bit of salted shrimp sauce, garlic, or chili, it's light yet savory — perfect as a starter.

Before long, a steaming table of haejangguk was set before us. Two bubbling stone pots, dombe pork, kkakdugi (radish kimchi), chili peppers, and lettuce wraps filled the table generously.

A small but nice touch: instead of plain white rice, they serve chewy black rice.

The power of minced garlic that explodes with umami

The haejangguk bubbling away in front of us was exciting to watch. The key to this place's haejangguk is the minced garlic. (I personally add a lot, a lot.)

The moment you stir the garlic well into the broth, the sharpness disappears and a deep, rich umami flavor comes alive.

The magic that gets even a beef-blood skeptic eating it

Now we stir in the hidden chili paste at the bottom and start fishing out the ingredients.

I'm someone who usually avoids beef blood because of its heaviness and smell, but here it's tender like pudding and savory, so I kept eating it without hesitation.

I'd say this place manages ingredient freshness better than most haejangguk spots I've been to.

A spicy broth that clears you out to the core

I took a big spoonful of the broth, well mixed with the seasoning. Kraaaaaah~~~~~~~‼️

Even though the broth is red, it's not harsh or oily — thanks to the freshness from the bean sprouts and cabbage, the aftertaste is very clean. There's no heaviness, so you just keep spooning it up.

After eating most of the solids, both my partner and I — who don't normally mix rice into soup — naturally ended up doing just that.

The thin, tender beef brisket, the glass noodles soaked in broth, and the bean sprouts go incredibly well with the rice. Maybe because the broth is so clean, I ended up scraping the bowl completely empty.
