I recently visited Paju with some friends and stopped by 'Bubyeokjeong Pyeongyang Mandu' for lunch. It's known as one of Paju's go-to spots for Pyeongyang-style dumplings — big, clean-tasting mandu all the way to a piping hot mandu hot pot. Nine of us went together and ordered a generous spread of dishes. Here's how our hearty meal at Bubyeokjeong Pyeongyang Mandu went❤️

Is parking easy? Private lot out front and plate registration

Bubyeokjeong Pyeongyang Mandu has a wide dedicated parking lot right in front, so it was easy to visit by car🚘 We went on a Saturday and the place was packed from lunchtime on, with the lot filled bumper to bumper. There's a parking barrier at the entrance, so don't forget to register your car after your meal!!!

After parking, we headed to the restaurant. The white building has 'Bubyeokjeong Pyeongyang Mandu' written in big letters, so it was easy to spot, and there was a steady stream of customers going in — clearly a popular Paju spot on weekends haha.

On one side of the exterior there was a display showing dumplings being made, along with the story of Bubyeokjeong Pyeongyang Mandu. Seeing photos of those big, hand-shaped mandu made me even more curious about the taste before we even walked in🥟

How long is the Saturday lunch wait? 15 minutes on Catch Table

I was surprised how crowded it was the moment we walked in! Nearly every table was full for Saturday lunch, and there was a Catch Table kiosk at the entrance where we could register for the on-site waitlist right away. We put our name down and waited.

There was waiting space both in front of the counter and outside the restaurant. Quite a few people were ahead of us, so I thought it might take a while, but tables turned over faster than expected. We got seated after about 15 minutes. Just keep in mind there can be a wait on weekends since it gets busy.

While waiting, I noticed a display case full of packaged mandu soup, mandu hot pot, dumplings, and mung bean pancakes🥟 You can buy Bubyeokjeong's food to take home and enjoy separately. Everything was neatly packaged by type in the refrigerated case, so it's a good option if you want to buy your favorite dish to take home after eating.

Misutgaru (roasted grain drink) and old-fashioned snacks while you wait

Next to that was a detailed sign explaining the misutgaru (roasted grain drink) and nostalgic snacks Bubyeokjeong prepares for guests. It was impressive that they put this much thought into pre- and post-meal treats, not just the mandu itself — reading through it all while waiting was fun.

According to the sign next to the misutgaru, there's a comfortable waiting room to the left outside the restaurant, and you're asked to wait there until your number is called and comes within 3 of being seated, at which point you can wait inside.

Right beside it were various old-fashioned snacks for dessert — different kinds of ppeongtwigi (puffed rice snacks), hardtack biscuits, and colorful candies. It was fun picking a little of whatever we wanted haha. A nostalgic treat for the adults, and kids would probably love it too.

My personal favorite was the injeolmi (rice cake) flavored snack — so nutty and delicious lol. My friends kept telling me to stop snacking and save room for the actual meal lol.

The misutgaru was in a big container, generously stocked, and after a hearty meal a cool, nutty glass of it made the perfect finish.

You have to register your car after your meal at Bubyeokjeong Pyeongyang Mandu! At checkout, just tell them your plate number and they'll register it, giving you up to 30 minutes of parking after payment. If you drove, don't forget to register your car while paying🚘

By the counter there were toothpicks along with a bottle of Febreze. If food smell on your clothes bugs you before heading out, you can give yourself a quick spray — a nice thoughtful touch.

Can a group of 9 sit together? Inside Bubyeokjeong Pyeongyang Mandu

After the wait, we finally got inside. The interior was clean and pleasant overall, and more spacious than I expected. The tables were spaced comfortably and there were plenty of them, making it good for both family meals and group visits. Eight of us split across two tables. Given how full the spacious dining room got during Saturday lunch, I really felt how popular Bubyeokjeong Pyeongyang Mandu is haha.

On one side of the restaurant, you could watch staff hand-making dumplings through a glass window🥟 Seeing a staff member shaping each dumpling by hand really added to the trust in the food.

There was also a separate area with a microwave and kids' tableware👶🏻 If you bring baby food, you can easily warm it up in the microwave, and small bowls and cups are provided too — handy for families. Kids' chairs are also available, so this is worth noting if you're looking for a kid-friendly restaurant in Paju.

What's at the self-bar? Extra broth and side dishes

There was a clean self-serve bar where you could freely grab more side dishes and broth as needed.

When you order the mandu hot pot at Bubyeokjeong Pyeongyang Mandu, you choose between mild and spicy, and the self-bar has both clear and spicy broth available separately, so if you run low on broth you can add more matching your chosen flavor. Side dishes were pickled radish, white kimchi, and napa cabbage kimchi, brought to the table as a basic set at first. After tasting, you can grab more of whatever's running low from the self-bar as much as you like — very convenient:)

Once seated, each table had small plates, cups, pepper, chili powder, soy sauce, vinegar, and other basic tableware and condiments neatly set out. Since Pyeongyang mandu has a clean, mild flavor, these extras let you adjust the taste to your liking with pepper or other add-ons.

There was also a Naver review event notice — write a receipt review and get a free mung bean pancake on a first-come basis. If the event is still running when you visit, it might be worth joining.

There was also a small booklet at the table explaining how to enjoy each dish best — from the Pyeongyang mandu hot pot to the buckwheat noodles, mandu soup, and hanwoo jjabagi. It was nice to flip through while waiting for our order, especially helpful for first-timers wanting to try things the Bubyeokjeong way:)

The utensils weren't just laid out loose on the table but individually wrapped in paper sleeves. A small detail, but hygiene like this matters at a restaurant with lots of turnover, and I appreciated how well it was maintained.

Mung bean pancake and Pyeongyang plain and spicy buckwheat noodles

The table next to us ordered the spicy mandu hot pot. It came with a bright red broth loaded with big dumplings, meat, and vegetables, and they also ordered mung bean pancake, plain buckwheat noodles, and spicy buckwheat noodles.

With the table full of food, it looked incredibly generous haha. Going as a group meant we could each order different dishes and share, which was great❤️

The mung bean pancake came out golden brown. The outside was crisply fried while the inside stayed moist, with a nice nutty mung bean flavor.

It was fairly thick and generously sized, good for sharing a piece each, and paired nicely with the mandu hot pot❤️

The plain buckwheat noodles came in a clear broth with buckwheat noodles, meat, and radish on top; the spicy version had the same toppings plus a seasoning sauce meant to be mixed in. Both were good, but I personally liked the spicy one a bit more.

If you ask, the staff will also bring you mustard on the side.

I'd expected the Pyeongyang plain buckwheat noodles to be nearly unseasoned like Pyeongyang-style naengmyeon, but the broth actually had a decent amount of seasoning — clean yet flavorful. The buckwheat noodles blended well with the crisp broth and went down easily haha.

The best dish of the day: mandu jjabagi, 12,000 won

Personally, the mandu jjabagi was the one I really loved❤️ It's a red broth packed with big Pyeongyang mandu, topped with meat and scallions in the middle — looked delicious just sitting there. The broth was spicy with a deep, rich umami that kept me spooning it up haha.

The dumplings were seriously huge👍 Lifting one with a spoon, it was so plump and big it was hard to eat in one bite — filling enough on its own! The spicy jjabagi broth had soaked into the dumpling skin, giving it a different charm from the regular Pyeongyang mandu.

Cutting one in half revealed a generous filling of tofu, meat, and vegetables. The soft dumpling skin, the mild savory filling, and the spicy broth together made a great combination. Of everything we ate that day, mandu jjabagi was genuinely the tastiest — a dish I'd order again next time❤️

Mild Pyeongyang mandu hot pot for 2, 28,000 won: how to eat it

Our table ordered the mild mandu hot pot. First came a huge pile of vegetables for the hot pot — napa cabbage, bean sprouts, bok choy, perilla leaves, wood ear mushrooms, enoki mushrooms, shiitake, and more, all in generous amounts. Meat came out too, and just looking at it, the portion was clearly plentiful.

The Pyeongyang mandu and kalguksu (hand-cut noodles) meant for the hot pot came out separately. A plate piled high with big, plump Pyeongyang mandu looked filling on its own. With kalguksu noodles included too, we could enjoy the full experience from hot pot to the final noodles.

Once the clear broth starts boiling, you add in the prepared vegetables and mushrooms. Bean sprouts, napa cabbage, bok choy, perilla leaves, and mushrooms filled the pot to the brim — it looked incredibly appetizing. Unlike the spicy broth at the next table, our mild version was clear and clean, great for enjoying the natural flavors of the ingredients.

After eating some of the vegetables, we dropped the big Pyeongyang mandu into the pot~~ The dumplings were so large that adding several quickly filled up the pot haha. Soaked in the hot broth, the soft skin and mild filling worked well together, and combined with the broth infused with vegetables and mushrooms, it was very filling.

Mild or spicy mandu hot pot: which one to order?

I stole a bite of the spicy mandu hot pot from the next table lol. Simmered with a generous amount of vegetables, mushrooms, and meat, the ingredients blended beautifully into the red broth and looked incredibly appetizing. The broth had a spicy, sharp kick that was genuinely delicious. The mild version has a clean, understated charm, while the spicy one keeps you reaching back for more thanks to the fiery broth — both had their own clear appeal❤️

Finishing with kalguksu noodles, timed by a 5-minute hourglass

Once you've eaten your fill of dumplings and vegetables, finish with the kalguksu noodles. There's a cute 5-minute hourglass at the table — flip it after adding the noodles to time it. Boil for 5 minutes, turn off the heat, let it sit for 1–2 minutes, and it's done! No need to keep checking the clock, and using the hourglass was kind of fun haha.

After boiling for 5 minutes and letting it rest briefly, the noodles came out perfectly soft. The rich, warm broth soaked into the noodles so well that even though I was full, I kept eating haha. From the big Pyeongyang mandu to the shabu-shabu-style vegetables and meat, finishing with kalguksu noodles — it was a truly generous mandu hot pot❤️
