Because it's shaved so thin, the texture melts away lightly in your mouth, but the more you chew, the more a rich, nutty flavor rises up — it paired really well with the sparkling wine.

② Gruyère

On the upper left of the plate was a hard cheese cut into thick squares — that's Gruyère. It has a subtle nutty aroma and a salty, deep umami flavor, and since I personally love pairing hard cheese with wine, this one really hit the spot.
