It's gotten so cold lately that I usually go for something heavy, but every once in a while I want something light — and today was that day. A bowl of healthy poke with fresh, mostly vegetable ingredients and a light oil-based sauce makes for a filling meal, which is perfect for a busy day.

Why poke makes an easy meal on a busy day

The biggest advantage of poke is that it's made quickly for busy modern life, and it's a vegetable-forward, diet-friendly meal that isn't too heavy or greasy while still being filling.

Choosing a base and a sauce at Salad Ring

With Salad Ring's poke, you can choose your base from brown rice and barley, whole wheat pasta, vegetables (50g), or egg (70g), which I really like since you get to pick exactly what you want. The menu gives simple suggestions for which sauces pair well with which base, but you can also mix and match to your own taste.

The number of sauce options was honestly overwhelming. Salad Ring bibim sauce, seaweed sesame mayo, spicy wasabi mayo, mala mayo, gochujang mayo, classic balsamic, and more — plus a variety of oils, so it's fun just picking one out.

The restaurant had two 4-person tables and some 2-person seats, and most of the visitors while we were there were delivery riders. Since poke and salad dishes are light and quick to eat, the turnover seems pretty fast.

Nutritional information guide for Salad Ring poke

These days, even when I eat out, my mindset is 'eat a healthy meal and still feel full,' so I tend to check sugar content pretty carefully. Getting to add olive oil to brown rice and barley for a low-calorie meal is such a nice touch. Lately in the mornings I've been making my own natural 'wegovy' — two egg whites plus a spoonful of olive oil — and Salad Ring basically makes a tastier version of that for you.

If you dine in, they also have cool lemon water ready, so you can cleanse your palate after eating without ordering a separate drink.

The three dishes this couple ordered to go

My husband and I planned to have a light poke meal first, then split a sandwich later if we got hungry while out, so we ordered and packed up three dishes total. All told, waiting time was under 10 minutes — it really came out fast.

Egg bomb sandwich, 5,500 won

My husband's favorite, the Egg Bomb Sandwich, ₩5,500. Packed with egg, this sandwich balances a savory, mild egg mayo with a slightly sweet sauce — the kind of thing kids would love too.
