At Marblejeong (마블정) near Ttukseom Station in Seongsu, I had a 400 g premium Korean beef assorted grill and doenjang sulbap (soybean paste rice soup). I grilled chadolbagi, eopjinsal, and sirloin myself, comparing each cut’s texture and its pairing with the sauces.

Is Marblejeong easy to reach from Ttukseom Station?
Marblejeong is on the second floor at 57 Seongsu-il-ro, Seongdong-gu, Seoul. It was close to Exit 5 of Ttukseom Station, so I had no trouble finding it.

On the way upstairs, there were photos of the premium Korean beef special course meal and assorted Korean beef and pork grill menus.

What are the interior and group dining spaces like?
A Korean beef aging refrigerator was visible on one side of the restaurant. The restaurant says its premium Korean beef and Korean pork are selected and trimmed directly by meat-processing specialists to manage quality. It also sold a range of alcoholic drinks, including wine.


The interior was more spacious than I expected, with plenty of tables. There was a separate room, and I saw groups dining together, so it seemed suitable for a meal with several people.

What accompaniments came with the assorted grill?
We ordered the 400 g premium Korean beef assorted grill and doenjang sulbap. Several sauces and side dishes arrived first, so we could mix and match them to our taste.



The assorted grill came with labels for each cut, which made it easy to identify the meat. The salad went well with its sweet-tangy yuja sauce, while the seasoned lettuce had a savory depth.


How did the Korean beef cuts differ when grilled ourselves?
Which sauce went well with chadolbagi?
Free grilling service was available, but we decided to grill the meat ourselves. The chadolbagi we put on first was thin and cooked quickly. Eaten warm, it was tender and nutty, and it paired well with the savory garlic sauce.


What was the texture of eopjinsal, and what went with it?
Next, we grilled the eopjinsal and cut up the mushrooms that came with it before grilling them too. Unlike the chadolbagi, the eopjinsal was tender with a slight chew, and it became nuttier as I chewed.

Adding a little of the perilla-leaf pesto-like sauce gave it more fragrance. Of the sauces I tried that day, this was my favorite pairing.

The grilled mushrooms were moist and chewy as well, making them a good accompaniment to the meat.
How did we eat the thick-cut sirloin?
The sirloin was thick, with noticeable marbling. We grilled the outside first, then cut it into bite-sized pieces.


Because it was thick, each piece remained generously sized even after cutting.

At first, I ate it without any accompaniment. The meat was tender and juicy, becoming nuttier as I chewed.

Adding seasoned lettuce gave the nutty sirloin more savory depth.

The asparagus also stayed with me. It released vegetable juices with each bite and was both crisp and moist.
How was the doenjang sulbap after the beef?
The doenjang sulbap we had to finish arrived still bubbling. Each spoonful had plenty of ingredients, and the broth was earthy and pleasantly spicy.



I liked ending the meal with doenjang sulbap after the Korean beef. It was enjoyable to try the different textures of the cuts with several sauces, and the spacious interior and separate room also left an impression.
