The kind of food that can blast away a whole week's stress! I was craving savory beef gopchang. Intestine packed with gop (the fatty inner lining), grilled until the excess beef fat renders off, leaving that golden-brown color and all that gop flavor spreading through your mouth! And if you can throw in some chewy makchang (grilled beef bung) on top, even better, right?!

No need to go far, either! Right outside Exit 7 of Sindang Station, perfect for stopping by on the way home from work, is a beef gopchang restaurant. So I went straight there — to Jinseong Hanwoo Gopchang Sindang Direct Branch!

It's a popular Sindang Station gopchang spot with a packed waiting line, but the wait was absolutely worth it — fresh intestine and friendly service from the ajummas working there! The gop was overflowing but genuinely savory, no gamey smell at all — a personal-best beef gopchang. Let's take a look through the review~

Jinseong Hanwoo Gopchang Sindang Direct Branch sits right up from Sindang Station Exit 7! I ran over the moment the clock hit 6, and when I arrived...

Ahhhh!!!!! The waiting line was insane, ugh...

I thought I was the only one clocking out on time, but apparently everyone else has flexible hours too... am I the only one doing 9 to 6? So jealous... sigh... A line like this could only mean a seriously good gopchang spot, so I gritted my teeth and waited it out to get in! (The smell was incredible, by the way.)

Even though it's a restaurant with plenty of seating, every single table was packed. The rich smell of beef gopchang filling the room really got my mouth watering.

True to a great restaurant, the menu was refreshingly simple. Hanwoo gopchang, hanwoo daechang, hanwoo makchang — that's it! And for dessert, kkakdugi yangbap (fried rice with radish kimchi and beef bung) and myeolchi guksu (anchovy noodle soup) were on offer.

It seemed like every table was ordering these two items without fail!

Once seated, you get seasoned chives and a minari-garlic sauce — they call it 'mijeolma' for short. A sweet-and-tangy sauce with a sharp kick of garlic and minari (water dropwort) flavor, it went well with pretty much everything.

The kimchi is a side dish that costs nothing extra, but it was properly fermented and genuinely delicious — the gat kimchi (mustard leaf kimchi), chonggak kimchi (ponytail radish kimchi), and scallion kimchi were all fantastic.

While picking at a few bites of kimchi, the par-grilled gopchang and makchang showed up! Generous and plentiful, it was already a visual win — and right after, a piping hot steamed egg in a ttukbaegi (stone pot) arrived as a complimentary side.

Not just a plain steamed egg — it had a deeply savory broth flavor, which helped soothe my growing craving to dig into the gopchang while we waited.

Staff grill the gopchang on a timer: how does it taste?

While we ate the kimchi and steamed egg and waited, they set a timer, and once it went off, staff came to finish grilling it themselves. With incredibly quick hands, they sizzled and trimmed the gopchang in no time~! The gopchang turning golden-brown, almost fried-looking in the rendered fat, was a fantastic sight!!! Time to dig in properly~

As always, start with the basics! I picked up a piece of hanwoo gopchang, and it wasn't even sundae (blood sausage) but was somehow just as packed full of gop — so plump and full!!! And the taste—

Wow... I thought I'd eaten a lot of gopchang before, but this is what real beef gopchang is supposed to taste like!!! How can it be this savory!! It really was a rich, deeply savory beef gopchang with absolutely no gamey smell!

Jinseong Hanwoo Gopchang's signature mijeolma sauce, with its sharp, sweet-and-tangy depth, brightened things up and made the rich, savory gopchang shine even more when eaten together — genuinely delicious.

Why to eat the hanwoo makchang first

They recommended eating the makchang early since it can toughen up if you wait, so after a couple pieces of gopchang, I went straight for it! Less 'chewy' and more of a satisfying, gentle resistance against your teeth — tender yet bursting with savory flavor, the makchang was truly delicious.

Back to the gopchang — how can it be so full of moist gop yet still taste so rich and savory throughout? I honestly wanted to know their secret, it was that good~

It also paired perfectly with the bean sprouts and kimchi! The match with the gat kimchi was great too — it felt like every side dish had been thoughtfully paired, a truly well-composed, delicious combination.

After finishing every last bite dipped in mijeolma sauce, it was time for the kkakdugi yangbap! I thought they'd stir-fry it right there on the grill plate, but instead it came out on a wooden board, carefully stir-fried in the kitchen.

Topped with minced garlic, julienned radish and kkakdugi (radish kimchi), and since every combination from the gopchang course had already won me over, I figured mixing everything together evenly would taste best.

So I mixed it up thoroughly, shaking and stirring with enthusiasm!!! The plate was hot enough that the julienned radish and kkakdugi sizzled and even got some crispy bits stuck to the plate, which was fun~

Scooping up a big mouthful and digging in! The slightly warmed radish and egg, the lightly cooked kkakdugi, the seaweed flakes and fried rice seasoning — it genuinely tasted like proper fried rice, not just steamed rice. And here's the kicker — 'so this is why they call it yangbap!' — chewy bits of teukyang (beef bung) turned up here and there, adding a chewy texture different from the crunch of the kkakdugi or radish, making for a fun, satisfying finish to the meal. Really enjoyed it!!!

Is Jinseong Hanwoo Gopchang in Sindang worth the wait?

I visited Jinseong Hanwoo Gopchang Sindang Direct Branch, a beef gopchang restaurant in Sindang-dong. There was already a full waiting line by 6pm, and I was impressed by both the generous portions and the quality of the gopchang. It's a delicious beef gopchang restaurant even without factoring in value, but it's great value on top of that — so my repeat-visit rate is 100%. The friendliness of the smiling ajummas also stuck with me. If you're looking for a beef gopchang restaurant in Sindang-dong, this one comes highly recommended!!!
