Korean BBQ ribs with cold noodles at Gwangmyeong Seoseo Galbi

In short

Gwangmyeong Seoseo Galbi is a charcoal grill rib restaurant in a Gwangmyeong Market alley near Exit 10 of Gwangmyeong-sageori Station on Line 7. The writer ordered seoseo galbi (standing-style marinated ribs), so-saeng galbi (fresh raw beef ribs), and mul naengmyeon (cold buckwheat noodles), comparing the sweet-salty marinated ribs paired with cold noodles against the fresh ribs eaten with just salt and wasabi, plus plenty of seasoned crab from the self-serve bar. The alley is a bit of a maze to find, but the marinade, meat quality, and self-serve bar all delivered — a satisfying Gwangmyeong Market rib restaurant.

As soon as you sit down, they set out a stone pot full of stew, and this was really, really good too — I was slurping it up while the meat cooked to perfection.

A clean, well-stocked self-serve bar

The self-serve bar here was really solid. You can grab more of any side dish you're running low on, and it was kept so clean and well-managed that I never worried about hygiene.

Especially having seasoned crab in the self-serve bar so you can eat as much as you want — that was a stroke of genius.

If you love crab, this alone makes the visit worthwhile.

The seoseo galbi marinade is the real deal — sweet and salty

The main event, seoseo galbi, has a really delicious sweet-salty marinade. What made it even better was that it wasn't overly sweet or too salty — nicely balanced.

The marinade itself has such good umami that it goes well with anything — rice, cold noodles, or a drink.

The meat sizzling away, cooking perfectly...! The charcoal here is exactly right for grilling ribs, so nothing burned and everything cooked evenly.

It's delicious just grilled and eaten plain, wrapped in lettuce, or with shredded green onion — all of it worked.

It's a combination that never fails, which made eating it genuinely fun.

If you order soju, it comes out perfectly chilled with a thin layer of slush on top...! The owner really knows what they're doing 💓

Delicious food again today, and

Cheers. Cheers. Cheers.

Seoseo galbi + cold noodles is a classic combo

Ribs really do call for cold noodles. Pairing seoseo galbi with mul naengmyeon turned out to be a treat. After a bite of the sweet-salty ribs, a cool bite of the noodles refreshed my palate, and I just kept going back and forth.

The noodles and broth were both clean-tasting, which balanced well with the ribs.

If you visit Gwangmyeong Seoseo Galbi, be sure to try the seoseo galbi and mul naengmyeon combo.

So-saeng galbi is enough with just salt and wasabi

The so-saeng galbi (fresh raw ribs) looked great even before cooking — the color had me excited — and grilled up, it was genuinely delicious. As they say, if it looks good, it tastes good too.

The meat itself was so good that salt and wasabi alone were more than enough.

It also went well with the restaurant's own soy-based sauce, packed with chopped green onion.

If you want something clean and simple, go with salt and wasabi; if you want more umami, go with the green onion soy sauce — either way works depending on your mood.
