Veteran General Fish Market Incheon Guwol Branch is one of the seafood restaurants I go to often in Guwol-dong. As the weather's been cooling down lately, I kept thinking about fall seafood in season. I especially wanted plump, springy grilled shrimp, so I did a deep search for Guwol-dong restaurants. The shrimp were flapping around nonstop — you could really tell they were still alive. I've been to places that mix in dead shrimp, but here they were all alive 😍👍 Watching them turn red on the bed of coarse salt in the pot made my mouth water instantly!

Since it's the king shrimp version, the shrimp were noticeably bigger than at other seafood restaurants! I peeled one well-cooked shrimp and could feel the springy firmness in my fingertips from the moment I cracked the shell.

The more I chewed, the more the shrimp's subtle sweetness and the salt's savoriness filled my mouth, blending perfectly into a nutty, fresh flavor.

As a special trick, we dropped a lemon slice into our soju glasses. The bright lemon scent softened the soju's bitterness and brought out the shrimp's flavor even more, so the drinks went down really smoothly!
