Chuseok holiday dinner at Matdongsam, a Beomeo-dong Daegu pork BBQ

In short

Matdongsam Beomeo Main Branch is a pork BBQ restaurant set in a renovated house in an alley in Beomeo-dong, Suseong, Daegu. Over the Chuseok holiday the writer grilled 120g of domestic gabrisal (pork neck skirt) for 11,000 won and dipped it in roasted salt, barley doenjang, wasabi and herring roe sauce, then finished with grandma's doenjang jjigae (soybean paste stew) and a bowl of black rice for 1,000 won extra. Matdongsam Beomeo suits a family meal or a group dinner built around specialty pork cuts at a fair price.

Matdongsam Beomeo menu and how much gabrisal costs

The signature menu at Matdongsam Beomeo is the 'Matdongsam Combo (600g)', consisting of 3 servings of special pork belly, 1 serving of gabrisal, and 1 serving of jjondeuksal (chewy pork jowl cut). The domestic gabrisal we chose that day was ₩11,000 for 120g.

Every table has a tablet menu installed, so ordering was easy and convenient.

Looking through the menu, the signature 'Matdongsam Combo (600g)' came generously packed with 3 servings of special pork belly, 1 serving of gabrisal, and 1 serving of jjondeuksal. You can also order special pork belly, gabrisal, and jjondeuksal individually, and the prices were reasonable, which I liked. There were also plenty of side meal options like grandma's doenjang jjigae, braised tofu, yeolmu bibim noodles, water bibim noodles, curry hot pot, steamed egg, and baby rice — I thought they'd pair perfectly with the meat.

Among them, our choice that day was the fresh domestic gabrisal! At ₩11,000 for 120g, it was reasonably priced enough to enjoy without hesitation.

The banchan spread and the four dipping sauces

Matdongsam Beomeo places stir-fried kimchi and sliced potato on the grill as a base, and serves four sauces: house-roasted salt, barley doenjang, wasabi, and herring roe. Once we finished ordering, the grill arrived with a generously laid-out basic table setting.

On the large grill, spicy-sweet-looking stir-fried kimchi and sliced potato were set as a base, and fresh lettuce wraps, sliced scallions, pickled onions, ssamjang (dipping sauce), and garlic were neatly arranged as side dishes to bring out the flavor of the meat even more.

I especially loved the variety of sauces. Along with the house-roasted salt, they had barley doenjang, wasabi, and herring roe — all special sauces that pair perfectly with the meat.

How Matdongsam recommends eating each cut

On the wall and on the tablet guide, 'How to Enjoy Matdongsam' was kindly written out. It said to put the meat on the upper part of the grill and the stir-fried kimchi and potato on the lower part, so it grills in the meat's own fat and tastes even better. It also said not to flip the meat too often — grill it golden brown on both sides, dip the first bite in the house-roasted salt to taste its natural flavor, and after that enjoy it with barley doenjang, wasabi, or herring roe. I followed the instructions exactly.

Grilling the gabrisal and how it tastes

The domestic gabrisal at Matdongsam Beomeo had a texture that was tender yet chewy, with rich juiciness. We finally placed the fresh, vividly colored gabrisal onto the heated grill. Maybe because it was domestic gabrisal, the quality looked incredibly fresh and appetizing just by sight.

The sizzling sound and the smell of the gabrisal cooking filled the air, making the wait genuinely enjoyable.

As instructed, we put the stir-fried kimchi and potato on the lower part of the grill, and as the meat's fat dripped down, the kimchi cooked deliciously in it, giving off a wonderfully savory smell.

Popping a golden-brown piece of gabrisal into my mouth, the tender yet chewy texture combined with bursting juiciness with every bite was truly excellent!

Finishing with grandma's doenjang jjigae and black rice

After enjoying the meat for a while, we ordered Matdongsam Beomeo's grandma's doenjang jjigae for a satisfying finish! The stew arrived bubbling in a hot stone pot, generously packed with tofu and vegetables, and the broth had a deep, savory flavor. It was the perfect dish to cleanly cut through the richness after eating meat.

The rice we paired with it (extra ₩1,000) was sticky black rice, which was perfect for mixing into the savory doenjang jjigae.
