Daegu ramen with oyster fry: Kara level 2 broth top-up at Ryusenso

As the weather got cooler I started craving warm soup, so here's my review of Ryusenso Dongseong-ro.

The sleek, weighty exterior with a black sign reading "Ryusenso" in Chinese characters catches your eye right away. It doesn't feel like a casual ramen shop at all — more like walking into a high-end traditional Japanese restaurant or bar, haha.

There are several bar seats set up too, so it's perfect for eating solo.


This place is so popular that there's a wait on weekends or during peak hours. You can put your name on a sign-up list near the entrance, and there's a separate waiting area, so waiting is pretty comfortable!

What we ordered: Ryusenso Kara level 2 and kaki furai
After some deliberation, we were craving spicy soup, so we ordered Ryusenso Kara (spicy tonkotsu ramen) and kaki furai (oyster fry) as a side.


The table comes with basic side dishes of pickled ginger and pickled mustard leaf. The tangy, spicy mustard leaf pickle is a real treat that cuts through the richness.

How spicy is Kara level 2, and does the broth top-up help?
First up, Ryusenso Kara level 2, the red spicy ramen. The rich pork bone broth base with its fiery red color is visually appetizing just to look at. Since I ordered level 2, it was spicier and sharper than I expected. So I added broth, haha. When you ask for a top-up, they give you unseasoned white broth. If it had been a clear broth, it might have felt greasy, but the spice cleanly cut through tonkotsu's signature heaviness, so it never got tiring all the way through!!

Adding ajitama (seasoned soft-boiled egg) is basic — a courtesy to the ramen itself, haha.


The firm, springy noodles soaked up the spicy, rich broth beautifully. Wrap the noodles in soft chashu pork for a big bite and it's game over!! So delicious!!

Is the kaki furai (oyster fry) side worth ordering?
Ramen alone felt like not quite enough, so we ordered the oyster fry as a side. Thick, plump oyster fries come piled high on the plate, served with tartar sauce, soy sauce, and lemon wedges. Just squeeze lemon juice over the oyster fry!!

If you're ordering a side, I strongly recommend the kaki furai. It's also a great menu to pair with drinks.

Cutting it in half, the coating outside is super crispy while the inside is packed with plump oyster. One bite gives you that crispy exterior texture along with the warm, moist flavor of the oyster spreading through your mouth. No fishy taste at all — just a savory, rich taste of the sea.

Another delicious meal done!! Thanks to this Dongseong-ro Daegu restaurant, I'm getting into ramen more and more,,!!!
