Today I went to lunch with Heeseung's couple, at 'Donggok Jemyeon Daegu Dongseong-ro Main Branch,' a well-known Gyodong restaurant in downtown Daegu.

We ordered two bowls of beef bone kalguksu, one chogye bibim kalguksu, and one extra-concentrated chicken kalguksu — four dishes in total.

Basic side dishes and kimchi set on the table

After ordering, the basic side dishes were set first. You portion out the kimchi little by little onto your own plate.

All the dishes we ordered were finished, and a staff member brought them straight to the table — I was genuinely surprised by how appetizing they looked. The noodles are boiled right after ordering, so everything came out freshly cooked.

Korean beef bone kalguksu, 11,000 won

First up, the beef bone kalguksu. It's a bowl of homemade fresh noodles in a broth made from carefully selected Korean beef bones, simmered for a long time — basically a bowl of tonic soup full of care.

When ordering the noodle soup, you can choose between regular noodles and thin noodles depending on your preference.

Extra-large chogye bibim kalguksu, tangy and spicy

Next is the extra-large chogye bibim kalguksu. Ordering the extra-large portion adds ₩1,000.

The tangy, sweet, and spicy sauce pairs really well with the tender chicken breast, and it's cool and spicy — a great warm-weather specialty dish. The noodles were nice and thick and chewy, and with the sauce seasoned in well, the savory flavor came through — it was really delicious.

Extra-concentrated chicken kalguksu, 13,000 won

Last is the extra-concentrated samgye (chicken) kalguksu, perfect as a boyangsik (nourishing food) for hot summer days. It had half a chicken in a rich broth simmered for over 10 hours with medicinal herbs and chicken bones.

You add a little minced garlic into the broth to taste and mix it in evenly. The soup was very rich and thick, yet clean and refreshing at the same time.

The noodles here were also very springy and chewy.

The chicken was very clean-tasting with tender meat. You can dip it lightly in the special chicken salt provided.
