Daejeon Japanese restaurant for maze soba: Choi Dining
In short
Choi Dining Daejeon Gwanpyeong is a Japanese restaurant in Yuseong, Daejeon, serving futomaki, rice bowls, and noodle dishes. Two people ordered snowflake yukhoe futomaki, Choi bone pork cutlet, and maze soba for a very filling meal. Verdict: a good pick when you want several different Japanese-style dishes at once.

A place in Gwanpyeong-dong for futomaki and noodle dishes together
While deciding what to eat for dinner on my day off, we headed to nearby Gwanpyeong-dong! The place we visited this time was the popular Japanese restaurant Choi Dining Daejeon Gwanpyeong (초이다이닝 대전관평점). 😊
The address is 20 Gwandul 4-gil, Yuseong-gu, Daejeon, South Korea, and it is open daily from 11:00 to 21:00. Break time is 15:00–17:00, with last orders at 14:15 / 20:15. Three cars can park in front of the restaurant, and there is also parking beside the building. The Gwanpyeong-dong 1175 parking lot is a one-minute walk away.

The sign out front has a cute character on it, so it really stood out even from a distance. 😊

They had a wide range of dishes, from futomaki to rice bowls and noodles.

The restaurant has tables for two and four, plus sofa seating on one side. They also have high chairs, so it looked like a fine place to visit with kids too. 😊

Three dishes for two
We debated what to get, then each picked something we wanted, and somehow we had ordered three dishes. 😆 Two people, two portions... haha.
- Snowflake yukhoe (seasoned raw beef) futomaki 5P
- Choi bone pork cutlet
- Maze soba (sauce-mixed noodles)
We ordered the pork cutlet sauce on the side!

Warm jang-guk (Japanese-style clear soup) comes as a basic side. The weather was chilly, so it was nice to have some warm broth. 😊

Spicy doenjang-flavored maze soba
The maze soba came out first!

They told us to drizzle on a little of this kelp vinegar, so I added a suitable amount. Mix it thoroughly so the noodles and seasoning combine well.

The maze soba had a spicy doenjang (fermented soybean paste) flavor. It had lots of chives, whose distinctive aroma went really well with the doenjang-based sauce! There was enough sauce to coat the noodles nicely, so they mixed up smoothly. 😊

The generously sized Choi bone pork cutlet
The bone pork cutlet was huge!! And it had a bone attached at one end.

The sauce came in a generous amount too. Since the cutlet was so large, they gave us tongs and scissors instead of a knife. 🤣 We cut it all into easy-to-eat pieces and were ready to dig in!!
The cutlet was crisp and nicely thick without being too tough, so it had both a satisfying chew and tenderness. The sauce was slightly sweet, with the flavor of Korean-style Western food and the look of Japanese cuisine. Its flavor was nicely balanced, so it did not become overwhelming. 👍

Yukhoe futomaki with egg-yolk sauce
Next was the yukhoe futomaki! They told us to pour the egg-yolk sauce on top. Egg yolk is a must with yukhoe, of course!

It was my first time trying futomaki (large sushi roll), and it was so big that I just wanted to try eating it in one bite for no reason. 🤣 But once I actually picked it up, one bite was clearly impossible haha. I ended up splitting it into two bites.
It had a good amount of yukhoe, and the rich egg plus cucumber gave it a nice crunch, so it was delicious! 👍 Even when I eat gimbap (seaweed rice roll), I prefer more fillings than rice, and I loved that this futomaki had more filling than rice.

Finishing with rice mixed into the maze soba
We ate diligently and were full, but it would have been a shame not to mix rice into the maze soba, so we added the rice that came with the cutlet! It felt like finishing with fried rice for dessert, and we enjoyed it haha. Noodles and rice really do taste different~
※ They will provide rice for the maze soba separately if you ask! We were full and did not need much, so we did not ask for it.

Three dishes for two, cleared. We polished off all three dishes and ended the meal feeling very full. 😆 Maze soba, pork cutlet, and futomaki all had different flavors and styles, so it seemed like a great place when you want to enjoy a variety of foods at once. The restaurant was neat and the seating was comfortable, so it looked good for a date as well as a family meal. If you are looking for lunch or dinner in Gwanpyeong-dong, Choi Dining Daejeon Gwanpyeong is worth a visit for everything from futomaki to pork cutlet and maze soba. 😊 We left after a really pleasant meal! I want to try the other dishes next time, so I would love to stop by again if I am in Gwanpyeong-dong. 🥰
