Poke restaurant in Gwangjin, Seoul: beef cauliflower rice box, Y-Stave
In short
Y-Stave Diet Konkuk is a protein box and poke restaurant near exit 2 of Konkuk University Station in Gwangjin, Seoul. After a swim, the writer ordered the beef cauliflower rice protein box with a tomato soup add-on: the vegetables were fresh and the beef was juicy rather than chewy, and the sauce came on the side so the meat kept its own flavour. The tomato soup is not sour but quietly spicy, and Y-Stave Diet Konkuk is worth a stop for anyone who wants it added every time.

I've had so many appointments lately and keep eating delicious food as part of sponsored visits, so my body's been puffy... so I was craving vegetables like crazy! So while I was in Konkuk for a swim, I stopped by Y-Stave Diet Konkuk, famous as a poke spot near Konkuk. And then I went and ate hot pot for dinner anyway^^!

How to walk to Y-Stave Diet Konkuk from Konkuk University Station

Come out of exit 2 of Konkuk University Station. As always, every hot spot and good restaurant in Konkuk is near exit 2...

If you've been to Konkuk University Station before, you know you turn left at exit 2 toward Angel-in-us Coffee. I turned left out of habit too, and checking the map, sure enough that was right, haha. My body's food radar remembers. Then I walked straight while singing Treasure's 'Jikjin' (Straight). Why that song specifically? Because if you turn at Angel-in-us and play this song while walking straight, you arrive right around when the song ends.

𖤐Side note: I'm an unlucky person. But apparently even unlucky people eventually arrive at this super cute orange-hued Y-Stave Diet Konkuk!!! The orange building washed away all my bad luck right there. Actually I was in a really happy mood after a great swim.

There's a menu board and a kiosk set up outside! If you're picking up, check the menu board and order at the kiosk outside.
Inside Y-Stave Diet Konkuk: bar seats for solo diners

It wasn't big, but the floor-to-ceiling windows made it feel completely open. It being a clear day only added to the fresh, breezy atmosphere at this Konkuk poke spot, Y-Stave Diet Konkuk! And since poke and salad are great for solo dining, they've also set up bar seats.

Since it's near Konkuk University, they're partnered with Quartz, the student council of Konkuk University's College of Art and Design! I think these might be characters made by the design students there... (maybe not). Korea's design future looks bright. These posters were taped up all over Y-Stave Diet, giving the place a cute, kitschy vibe!!
What's on the menu at Y-Stave Diet Konkuk

In short, the protein box is the base of Y-Stave Diet's menu! You pick your protein — beef, smoked duck, chicken breast, or salmon steak — then add pasta, tofu noodles, oats, or cauliflower rice!

They even have a mala flavor, haha. Though mala only comes with tofu noodles or pasta. Mala really is made for noodles♡

You can add toppings and dipping sauces to the protein box, and remove any veggies you don't like!! Side menu items include Greek yogurt, tomato soup, boiled eggs, sweet pumpkin soup, and protein cookies. Even the cookies are protein cookies...

The drinks are all zero-calorie too, haha. By the way, we've really reached an era where people buy bottled water...

They also have set menus. Protein rice bowl and the new pasta set!!
Protein, calories and nutrition in the protein boxes

The protein content is insane. You're supposed to eat about 1.6 to 2 times your body weight in grams of protein, and one meal here can cover half of that. This Konkuk poke spot is really doing the most, love love love love.
Honest review of the beef cauliflower rice protein box
I got the beef cauliflower rice protein box with a tomato soup add-on at Y-Stave Diet Konkuk. The beef cauliflower rice protein box has veggies on one side and cauliflower rice topped with beef on the other. The vegetables include green beans, lettuce, olives, chickpeas, bell peppers, garlic flakes, and broccoli!
Since it's a popular Konkuk poke spot that keeps getting delivery orders, the vegetables seem to turn over fast, and true to that, the freshness was excellent. It made me genuinely happy to eat vegetables this good after such a long time.

But meat is still meat. It wasn't chewy at all and was full of juice!! Y-Stave Diet also serves the sauce on the side instead of pouring it on (huge plus in my book — unless it's stir-fried tangsuyuk, dipping is always the way) and this sauce paired really well with the meat. I usually prefer the taste of the meat itself and don't eat much sauce, but I went through a ton of this one...

When you eat poke, do you mix everything together or scoop it bite by bite? I mix it. I love mixing it all up and taking one big bite.

Why you should add the tomato soup at Y-Stave Diet Konkuk
Please, please add this tomato soup. I worried a tomato soup might be too sour, but it's not sour at all. It's subtly spicy with a savory depth that makes you want to toss it with pasta. A lot of people these days (myself included) are used to intense, over-the-top flavors, but at this Konkuk poke spot, Y-Stave Konkuk, let's all take care of our health!!!!!!!
