Raw shrimp is at its best these days, so I wanted to properly eat Incheon shrimp sashimi and have a drink... which brought me to Veteran General Fish Market Incheon Guwol Branch.

We went as a group and ordered mainly raw shrimp sashimi and an assorted flounder platter, plus drinks — exactly the sashimi restaurant spread we wanted haha.

Best of all, it wasn't just sashimi — there was a self-bar for basic side dishes, and we could fry our own kimchi pancake, which made it great for a long night of drinking and talking.

Incheon raw shrimp sashimi tastes better in season

The dish I was most looking forward to at Veteran General Fish Market Incheon Guwol Branch was, of course, the raw shrimp sashimi. It came on a large plate lined with ice, with the cleaned shrimp arranged in a circle — a generous portion, so I took photos the moment it arrived.

The shrimp meat was translucent and glossy, looking plump and firm just from the look of it :)

One bite and it had that springy chew with the naturally sweet flavor unique to raw shrimp. A little vinegar-chili sauce or wasabi was nice, but the first few pieces were best eaten plain.

If you're craving Incheon shrimp sashimi this time of year, this is a dish worth ordering as your main. The shrimp heads came separately, fried crispy — a delicacy on their own!

Eating the leftover heads fried crispy after the raw shrimp sashimi was perfectly nutty and made a great drinking snack. Completely different texture from the springy raw shrimp, so I kept reaching for more.

Flounder sashimi to pair with the raw shrimp

Raw shrimp sashimi alone felt like it wasn't quite enough, so we also ordered flounder sashimi. Several kinds of sashimi came piled generously on one plate, sliced not too thin, so each piece had a satisfying bite.

A bite of raw shrimp, then a bite of sashimi, then a sip of soju in between — the combination was spot on lol.

If you're visiting with a group, ordering both raw shrimp sashimi and regular sashimi to share rather than sticking to just one is a good idea. Having both dishes in the middle of the table that day really felt like a proper sashimi restaurant visit.

Side dishes from the self-bar at Veteran General Fish Market

On one side of Veteran General Fish Market Incheon Guwol Branch, there's a self-bar where you can grab extra basic side dishes. Kimchi, salad, and various vegetables were prepared, so whatever ran low, we just grabbed more as needed.

I tend to eat quite a lot of side dishes when having sashimi, so this setup was actually convenient.

Frying your own kimchi pancake at the table

Another thing I liked here was frying your own kimchi pancake! You take the prepared batter and fry it yourself on the pan, and eating it fresh and hot off the pan made it a real treat.

A bite of sashimi, then a bite of hot kimchi pancake, then another drink :) It was more fun to fry it yourself than just having a pre-made pancake as a side, and I liked being able to cook it as golden as I wanted.

That day we really ate our fill, centered on raw shrimp sashimi and an assorted platter, and the springy raw shrimp sashimi is what stuck with me most. Being able to enjoy the shrimp heads fried crispy too, grabbing basic sides easily from the self-bar, and frying our own kimchi pancake made for a great setup for drinks.
