Walk out of Sindang Station Exit 7 and the restaurant is right there. Being so close to the station made it easy to find, and even in the early evening the place was already packed with customers.
Inside, round tables filled the space, giving it a classic gopchang restaurant atmosphere — the kind of cozy place perfect for gathering with a few coworkers for drinks after work.


Hanwoo gopchang for two at 19,000 won and house-made kimchi
The menu at Jinseong Hanwoo Gopchang Sindang Direct Branch is fairly simple: gopchang, daechang, makchang (beef abomasum), and so on. We ordered hanwoo gopchang (₩19,000) for two servings and hanwoo daechang (₩19,000) for one serving. A sign on the wall said the scallion kimchi and mustard leaf kimchi were made in-house, which got us excited.


After we sat down, they brought out the basic side dishes along with an instruction card. The scallion kimchi and mustard leaf kimchi were perfectly tangy and fermented, pairing nicely with the rich gopchang.



How the timer grilling by staff works
Once the gopchang was placed on the grill, they set a digital timer next to it. It's a system where staff comes over to grill once time's up, so we waited while enjoying the fluffy steamed egg that came as a complimentary side.
When the timer went off, a staff member came and cut the gopchang into bite-sized pieces. That said, since the restaurant was so busy with both the kitchen and floor staff stretched thin, the explanation of how to use the timer or how to eat properly was a bit lacking. Understandable, though, given how popular this place clearly is.
Taking a bite of the well-grilled gopchang, the inside was packed with savory gop (intestinal fat) and wasn't tough at all.

Adding hanwoo daechang: why the minari sauce is the key
As we were finishing up the gopchang, we wanted more rich, savory flavor, so we added hanwoo daechang (₩19,000) for one serving. The daechang was plump and full, with a crispy golden exterior and a soft, fat-bursting texture inside on the grill — it was excellent.


The minari (water dropwort) sauce really shined with the daechang. Daechang can get greasy fast if you eat a lot of it, but topping each piece with a generous amount of minari and dipping it in the sauce added a refreshing touch, so it never felt heavy — we enjoyed it all the way through.

For reference, the restroom is located in a curtained-off area inside the restaurant and is unisex.
