There's a parking space right in front of the restaurant, so you can just park there~

I went to a Korean beef butcher restaurant in Hoseong-dong, Jeonju, and wanted to introduce it to you~ Hoseongjeong is known as a place where you can pick out good meat yourself and grill it, and I heard the quality was excellent, so I went to check it out. Let me tell you all about it~

Here's the inside of the butcher counter! Right as you walk in the entrance, the butcher counter is on the right. You pick your meat first, pay, and then take it to the dining area to grill and eat~

They sell everything from pork to Korean beef to frozen meat, so it was nice being able to choose based on the cut and price range!

Restaurant atmosphere and room seating

Here's the inside of the restaurant~ It has that clean, spacious barbecue restaurant feel. Overall it's bright and tidy, and the tables are spaced out generously enough that it also seemed suitable for a group meal.

There's also room-style seating, which looked great for private family gatherings or group meetups~

Side dishes and sauces

After ordering the meat, we came over to the dining area. As soon as we sat down, they set out the side dishes!

Salad, napa cabbage kimchi, stir-fried kimchi, seasoned doraji (bellflower root), green onion kimchi, pickled onion strips, bean sprouts, and lettuce for wraps all came as basic side dishes.

Three sauces also came out. Pink salt, ssamjang (dipping paste), and wasabi soy sauce — and the wasabi soy sauce was really delicious hahaha

And here's the beef seaweed soup that comes as a default!

It's a light, savory style that goes well with the meat — the seaweed was soft and well-simmered, so it released a subtle sea aroma with each chew, and the broth wasn't overpowering, just a clean, deep umami drawn from the beef.

Baby chairs are also available, so anyone who needs one can just grab one and use it comfortably~

There was also a self-serve corner. Besides the basic side dishes, there was seasoned bean sprouts and stir-fried fish cake. If you want more, feel free to help yourself~

How does 1++ Korean beef buchaesal taste?

We picked the Korean beef buchaesal~ It was 1++ grade so the marbling was a work of art hahaha

When you grill a piece and pop it in your mouth, the outside turns golden while the inside stays moist, and the juices spread out so it melts in your mouth~

You get a subtle beefy aroma along with a savory umami at the same time, and the balance was really good.

The buchaesal's characteristic springiness came through in the chew — rather than tough, it was chewy yet tender.

Salt first, then wasabi soy sauce

Dipping it lightly in salt made the meat's clean, rich flavor even clearer, so I'd recommend dipping the first bite in salt!

Dipping it in the wasabi soy sauce, the wasabi cut through the fattiness so it never felt greasy, even to the last bite~

It starts off clean, and the more you chew, the more the savory beef aroma and chewy texture come through — this Korean beef buchaesal was so good.

Grill the doraji

Here's the seasoned doraji side dish~ Grilled on the pan, the fragrant doraji aroma combined with the sweet-and-sour seasoning was so good, and it went really well eaten together with the meat!

The combination of meat and doraji was surprisingly good, so I kept reaching for more~ I really recommend grilling the doraji and eating it with the meat!

Finishing with yukhoe bibimbap

Here's the yukhoe bibimbap~ It came out with a generous amount of glossy red yukhoe (seasoned raw beef) on top, looking appetizing just to look at.

When you mix in a big spoonful, you can really taste the yukhoe's soft, chewy texture along with the subtle beef aroma.

The more you mix the rice, yukhoe, and vegetables together, the more the savory yukhoe, sweet-and-sour seasoning, and fresh vegetables come together in harmony — the kind of taste that keeps you reaching for more~
