Gomae-dong kalguksu restaurant with a soy-wasabi dip: Jangwongap

In short

Jangwongap Kalguksu Yongin Giheung Branch is a minari shabu-shabu kalguksu (Korean knife-cut noodle soup) restaurant in Gomae-dong, Giheung-gu, Yongin. The visit started with the spicy red broth, with minari and mushrooms dipped in soy sauce and wasabi, then moved through beef shabu-shabu, aged fresh kalguksu noodles and a side of Jochiwon peach bibim mandu (dumplings in spicy sauce) for 9,900 won. The self-serve corner for kimchi and extra broth made the meal easy, and the misugaru (roasted grain powder) slushie is reason enough to come back.

Inside Jangwongap Kalguksu: dining room and self-serve corner

A clean, pleasant interior. The moment you step in, a wide, bright hall welcomes you. The tables are spaced generously, making it a great spot for family meals or gatherings, and the whole place is well maintained, so you can eat in a very comfortable atmosphere.

The self-serve corner in particular was very neatly organized — fresh kimchi, extra broth and various seasonings were all set out so you could help yourself freely without feeling awkward about it, which was convenient.

Spicy red broth instead of the white broth

The star of Jangwongap Kalguksu is unquestionably the shabu-shabu kalguksu. You can choose between a white broth and a spicy red broth depending on your taste — and since we love a spicy broth, we ordered the signature version today.

How to eat the minari shabu-shabu: soy sauce plus wasabi

The essence of minari shabu-shabu. Once you order, the table fills up with mountains of minari, mushrooms and fresh beef. It's visually overwhelming, so I couldn't help but reach for my phone camera.

Fresh minari and mushrooms together

The biggest appeal of Jangwongap Kalguksu is how generously the fragrant minari is used. Dip the minari and mushrooms into the boiling broth, and once they've just wilted, dunk them into the special sauce (soy sauce plus wasabi) — the fragrant burst of minari and the chewy texture of the mushrooms filling your mouth is nothing short of art.

They say minari purifies the blood and has strong detoxifying properties, so it felt like I was taking care of both taste and health at once!

Once the minari and mushrooms have deepened the broth, next comes thin, fresh beef, dunked in and lightly cooked. The texture is so tender it practically melts in your mouth — not tough at all — a flavor that anyone, young or old, would love.

Which side dish: seafood pancake or Jochiwon peach bibim mandu?

At Jangwongap Kalguksu, a well-known kalguksu spot in Giheung-gu, Yongin, the famous side dishes are the whole shrimp seafood pancake and the Jochiwon peach bibim mandu. I only had the bibim mandu this time and decided to save the pancake for next time.

Whole shrimp seafood pancake, 13,500 won

This is apparently the real 'kick.' The pancake is fried thin and crispy, generously studded with plump whole shrimp and all kinds of seafood, so the outside is crispy and the inside stays moist — the textbook definition of crispy-outside, tender-inside. Every bite reportedly bursts with the savory flavor of seafood along with a satisfying crunch. It's also quite large, so it's perfect for sharing — I highly recommend adding it as a side if you visit! I'll definitely have the pancake next time too ^^

The bibim mandu, tossed with vegetables in a natural-fruit sauce, was a flavor I'd never tasted before.

Finishing with aged fresh kalguksu noodles

Chewy fresh noodles. Once you've finished the meat and vegetables, ask the staff for the kalguksu noodles. Instead of regular noodles, they use aged fresh noodles, so the broth doesn't get cloudy and the noodles stay wonderfully chewy and springy. The spicy, richer broth soaks right into the noodles, making it impossible to put your chopsticks down until the very last bite.

Skipping the free fried rice for the misugaru slushie

We were too full so we skipped the fried rice on our way out, but apparently it's also a masterpiece. What is the Korean dessert if not fried rice, right? After ladling out some of the broth, they toss in rice, vegetables and gim (seaweed) powder, frying it up savory and crisping it slightly like nurungji (scorched rice) — apparently the perfect finish. (And the fried rice is free, ㅜ.ㅜ)

On my way out after finishing the meal, I tried the misugaru slushie, something you can't find anywhere else. I'll definitely have to come back just for that slushie next time... 200% revisiting. ~~~
