True to being a spicy braised pork rib specialist, there was really just one main menu item. No complicated choices to sort through, which ordering easy and made the confidence in the flavor obvious.

The add-on sides (sari) included a wide range — sundubu, rice cake, mushroom, udon noodle, glass noodle, ramen noodle — so you could customize to your taste.

Ordering was also conveniently available via kiosk.

What comes with the meal as side dishes?

This is the basic table setting that comes with an order of ribs. It was a solid enough spread to make a full meal of it.

The setup under the table was also neatly arranged, which was convenient.

Braised ribs with sundubu and glass noodles added

The visuals on the main dish, the ribs, were tremendous. Places specializing purely in spicy braised ribs like this are rare these days, so I was satisfied to find a nearby spicy galbijjim spot in Gimpo.

For add-ons I chose sundubu and glass noodle — the glass noodle actually comes included by default, so it might be smarter to finish that first and add more later. The sundubu was great added right away, though. This was my first time trying sundubu in braised ribs, and the savory tofu with the spicy sauce was a perfect match.

One advantage of the braised ribs is that they come fully cooked, so you can dig in as soon as it starts bubbling. Rice cake and glass noodle sides come included by default too, so you get a hearty carb fix. The chewy, well-cooked rice cake sari in particular was really delicious.

Maybe because the ribs are domestic pork, there was no off smell, and they were cooked so thoroughly the bones just slid right off — such delicious braised ribs.

Rice balls served alongside the braised ribs

Best sides to order: rice balls and steamed egg custard

The rice balls I added as a side dish paired perfectly. The seasoning wasn't too spicy or harsh, and there was a subtle sweetness that gave it a nice savory depth.

They go great alongside the spicy braised ribs, so if you're debating on a side, I'd recommend the rice balls.

I also tried the steamed egg custard, which you can't skip when eating spicy braised ribs — it was fluffy and helped tame the heat, so I enjoyed it a lot.

That wraps up my review of Jin Galmaegal, a Pungmu-dong restaurant where I thoroughly enjoyed the braised ribs.
