One bite filled my mouth with nutty cheese and truffle oil aroma, while the matsutake texture still came through. The moist dough tied it all together so well—it was delicious.

Gamtae is a fragrant Korean seaweed, and the dish arrived plated in a way that suited the design of the plate so perfectly?

The rich, nutty gamtae pesto seafood barley risotto was wonderfully creamy, yet the shrimp and octopus retained their texture. Especially delicious were the scallops, torched crisp on the outside and moist within, which simply melted in my mouth 😋
