I visited Usiya Seongsu Branch, a high-quality Korean beef yakiniku restaurant where every cut was carefully grilled almost like a dish—so I had the best time trying such a delicious variety of cuts!

What comes with Usiya Course C


At Usiya Seongsu, a Korean beef omakase favorite in Seongsu, the staff grill the yakiniku themselves over a charcoal brazier. You can try six different cuts of Korean beef.

Beef tongue, striploin, top blade, brisket, tail, and tripe are served. Seasonings or garnishes suited to each cut come separately, too!
Beef tongue with yuzu ponzu

At Usiya Seongsu, where they grill everything for you, I heard they work through the cuts in order from the lighter ones. First up, they placed the beef tongue on the brazier.
My beloved garlic chives arrived, too... I mixed them well with the sauce and had a taste. So fragrant and crisp—excellent.
They grill the mushrooms wrapped in foil, perhaps to keep all their juices inside.

Each finished grill item was plated beautifully, like a proper dish. It was cut into easy-to-eat pieces, too. For the beef tongue, they said to dip it in the yuzu ponzu sauce...!!!
Maybe because it was Korean beef tongue, but it was the best beef tongue I have ever had. Usually beef tongue has a bit of a meaty, bloody flavor, so it can feel a little like heart to me? I was still getting used to that, but this had none of it—just a wonderfully savory charcoal aroma. I loved its signature springy bite and its mild, nutty flavor.
Striploin in two flavors
Eggplant was the garnish for the striploin. They grill it in two versions: one simply as striploin itself, and another marinated in teriyaki sauce. So you get to enjoy striploin in two different flavors.
The piece on top of the eggplant is the teriyaki striploin.
For the plain striploin, I dipped it in salt and tried it with fresh wasabi. Wow... even though it melted away, it still had a lovely texture and was wonderfully rich! It was balanced—nutty and rich yet clean—and my favorite cut.
The teriyaki striploin was deliciously savory as well, and the eggplant was soft and tasty, too!
Top blade with zucchini
Next, they put top blade and zucchini on the grill.

They plated the finished top blade so prettily, right? Haha.
The juicy mushrooms, with all their moisture locked in, were wonderfully chewy. The nicely browned zucchini was sweet, too.
The top blade was rich and so delicious, too!!! >.< It was nutty with salt and fresh wasabi on top!
Brisket with shishito peppers
Next was brisket! This time it came with shishito peppers as the garnish.

It seemed to have a light seasoning, so it was savory, chewy, and delicious all on its own!!!
Korean beef and braised aged kimchi meal

This meal arrived midway through the grilled meats. It came with a bowl of rice and Korean beef braised with aged kimchi. The braised aged kimchi had such a wonderfully substantial broth—totally my style. It was rich, thick, and deep without being salty, which was amazing. Perhaps because of the beef, it was clean-tasting with a gentle richness, and so delicious!!!

My boyfriend said it was so good, then mixed up and ate even my rice. >.<
Charcoal-kissed grilled beef tail

I had often eaten beef tail braised, but grilled? I was so excited! They even provided plastic gloves, so you can hold it with your gloved hand and pull the meat off. The grilled beef tail had that gentle charcoal aroma... ahh, it was so delicious!!! Mild, nutty, chewy... and quite rich, too. It was such an unusual yet tasty cut, so I was very satisfied. Haha.
Springy tripe and dessert
I tend to like grilled offal, so I was happy that this Korean beef omakase included it, too.

It was grilled wonderfully chewy and springy, which made the texture so enjoyable.


This dessert was cherry tomatoes pickled in maesil (Korean green plum). Sweet-and-tart and refreshing, it was a lovely palate cleanser.
I was amazed by the charming, generous course, with care evident in every item, and had such a fun, varied Korean beef experience at Usiya! It could be a great choice if you would like to enjoy little portions of many different Korean beef cuts.
