In short
Jongga Mandu is a handmade dumpling restaurant on Supyo-ro near Jongno 3-ga Station in Jongno, Seoul, where the dumplings are folded fresh every day. After a 15-minute lunch wait, the writer ordered mandu jeongol (dumpling hot pot, ₩13,000 per person) and fried dumplings, eating through crisp fried dumplings, shabu-style beef, meltingly soft hot pot dumplings and a kalguksu (knife-cut noodle) finish. Now that the weather's starting to turn a bit chilly, I keep craving something warm and soupy for no reason.
It was one of those days when I thought hot dumpling hot pot with kalguksu (knife-cut noodles) mixed in, plus a shot of soju, would be perfect.
This time I visited Jongga Mandu, a well-known spot in Jongno 3-ga. It's already a total local favorite among office workers in the area!!
There was a waiting list at lunchtime no matter what, and I waited about 15 minutes before getting in :) I had high expectations since it's a handmade dumpling restaurant that folds mandu (dumplings) fresh every single day, and wow, the dumpling hot pot here turned out to be seriously legit!!

Where is Jongga Mandu, and how long is the lunch wait?
Jongga Mandu is located near Jongno 3-ga Station, at 88 Supyo-ro, 1st floor, Jongno-gu. It's a good spot to stop by after a date around Jongno 3-ga, Ikseon-dong, or Euljiro, or after a walk along Cheonggyecheon when you're craving something warm and soupy :)

Maybe because there are so many companies nearby, the place was packed with office workers at lunchtime! Even though I arrived early, the waiting list had already started, so I put my name down and waited.
A Jongno Blue Ribbon spot for dumplings folded by hand daily

Jongga Mandu's biggest draw is definitely its handmade dumplings. Inside the store, you can watch the dumplings being folded one by one, and seeing that only raised my expectations even more!!!

With dumplings, the balance between the wrapper and filling matters a lot, and these aren't factory-made frozen dumplings but ones folded fresh every day!!! There's no way they could taste bad.

It's also known as a Blue Ribbon restaurant, so I had expectations going in, and once I actually ate here, I understood exactly why it's always packed!
Inside Jongga Mandu: group tables and the self-serve side-dish bar

Once inside, it was a much bigger hall than I expected, with group seating available — a real Jongno 3-ga favorite. The interior was bright and very cool with the AC, which was great since eating hot pot didn't leave me sweating 😍

The tables themselves were on the wider side, so eating hot pot felt comfortable, and the staff were quite friendly even while busy, which raised my impression of the place even more :)

There was also a self-serve side-dish bar in one corner of the store. You can grab refills for the side dishes there :)

The fried dumplings that arrive first
The menu I ordered this time was the mandu jeongol and fried dumplings. As a sort of appetizer, the fried dumplings came out first, so I dug in right away.
Wow — the moment I took a bite, I could tell these dumplings were the real deal. Crispy outside, tender inside, the textbook definition, and they weren't overly sweet but soft with a generously packed filling, so I finished them off in no time. (Kimchi dumplings and meat dumplings come together.)

What comes in the mandu jeongol, and the order to eat it
And then came the mandu jeongol. Jongga Mandu's hot pot combines their own handmade dumplings with meat and vegetables, and finishes with kalguksu noodles added at the end. It's not just about the dumplings — you get to enjoy the broth, vegetables, meat, and noodles all in one meal, making it a filling, satisfying lunch. Great for a hangover too!!

Once the hot pot arrives, you start by adding the dumplings and letting it simmer. At first you have to wait a bit for the dumplings to cook through, but it didn't take as long as I expected. Once it starts boiling hard, the vegetables and meat go in, and as each ingredient cooked, the broth's flavor deepened more and more.

Once the dumplings floated up and the vegetables were fully cooked, the shabu-style beef went in, and the meat alone was already amazing!!

How do the hot pot dumplings taste?
I scooped up a dumpling right away and — wow... if the fried dumplings were the textbook example of crispy-outside, tender-inside, the dumplings in the hot pot were genuinely melt-in-your-mouth soft like cotton candy!!

How does it even taste like this? The meat dumplings had a clean, soft flavor, while the kimchi dumplings had a slight kick, so they were great to alternate between. I couldn't skip either one, but personally, the kimchi dumplings 😍 were seriously so good.
The broth was clean but had a subtle savory depth that kept me going back for more spoonfuls. It was great to eat during this changing-season weather when your throat feels scratchy and you crave something warm, and the hot broth felt soothing all the way down. Broth is really the key to a good mandu jeongol, and at Jongga Mandu, both the dumplings and the broth delivered.

Finishing the broth with kalguksu
The finale was kalguksu! By that point, the broth had absorbed all the flavor from the meat, vegetables, and dumplings, so it tasted even deeper than at the start. Adding a serving of kalguksu noodles into that broth and letting it simmer — wow, this kalguksu was seriously delicious too. The noodles were so soft and chewy that I genuinely wanted to order more 👍

When is the best day to visit Jongga Mandu?
I thought the mandu jeongol would just be ordinarily tasty, but this place was really different!! Truly a legit Jongno 3-ga favorite 😍 I was genuinely moved 🎁
