A Jeju pork restaurant in Magok! With such a variety of cuts and good aging, it was tier one among the BBQ places I've tried in Magok.

Menu: how to order Jeju pork by cut

At Tamra Factory Magok Direct Store you can order Jeju pork by specific cut. There's pork neck, pork belly, skirt meat, jowl meat, and more, plus mixed-cut platters where you can try several cuts at once.

On one side of the restaurant, the meat was being stored like this—

Once you order, the owner pre-sears the meat before bringing it out. Real craftsman's touch, haha.

Side dishes, the melchet dip, and the mood at Tamra Factory

Order meat and you get a full spread: kimchi, seasoned bean sprouts, garlic, ssamjang (dipping paste), and lettuce wraps. There were a few kinds of pickled vegetables too, plus a spicy side dish that went great with the meat, so it was fun switching up the combinations.

There's a TV in the restaurant too, so baseball fanatic Hodu-YD got to eat while watching baseball!! Restaurant favorability +1

And you can't have Jeju pork without melchet (fermented anchovy sauce)! Set it in the middle of the grill, let it simmer, and eat it once the meat is cooked—perfect timing. They simmer it just right along with the meat.

Staff sear first, charcoal finishes: why grilling here is easy

Tamra Factory's thick cuts of meat take a fairly long time to grill, but they come out already partially pre-seared. All you have to do at the table is finish cooking them over the charcoal to your liking. The owner kindly explains it again right at your seat.

You get a proper charcoal aroma this way, and it's easier than grilling everything from raw yourself, which was nice!

Since it's a Jeju restaurant, the drink of choice has to be Hallasan, right? And soju has to be the original, not the mild one~

Two servings of Jeju pork neck: a piece of fat in the melchet is the move

We started with two servings of pork neck! Pork neck can only be ordered from 2 servings, so if you love pork neck, make sure to order that first!

To boost the umami of the melchet even further, the owner dropped in a piece of fat trimmed from the pork neck—and this was the move haha. The savory richness of the fat made the flavor incredible.

The outside was browned nicely while the inside stayed juicy, so even though it's pork neck, it wasn't dry at all. Dunk it right into the simmering melchet! Salty melchet with pork is a combo that just can't fail, ugh.

Wrapped the meat with garlic and pickles in a perilla leaf and ate it up neatly. At a BBQ place, the meat matters but so do the side dishes, right? The wild garlic and pickled perilla leaves—every single side dish was delicious.

Adding raw pork belly: the three-serving order two people should get

Two people, three servings is the unwritten rule at BBQ places, right? After the pork neck, next up was raw pork belly! It has more fat layers than pork neck, so it definitely had a richer, chewier flavor. Personally, rather than sticking to just one cut, I'd recommend ordering two servings of pork neck and adding pork belly!

It's easy to get to from Magok Station and offers parking support, so I highly recommend it to anyone looking for a BBQ spot for a dinner appointment or company dinner in Magok!
