What two people ordered at Gildon and what it cost
On an evening when pork belly was calling in Galma-dong, Seo-gu, Daejeon, two of us landed at Gildon, a BBQ spot near Gallery Hurium. That day we ordered one serving of boneless flower pork belly (150g, ₩15,000), one serving of Iberico flower pork neck (150g, ₩15,000), aged kimchi jjigae (₩7,000), and hangover ramyeon (₩4,000). With two cuts of meat plus stew, rice, and ramyeon, the total came to ₩42,000. It was a nice setup for comparing the appeal of two different cuts and finishing off with a warm bowl of soup.



What is it like when staff grill the pork for you?
Gildon bills itself as the textbook example of the comfort of having your meat grilled for you, and it's a Galma-dong BBQ spot that lives up to it. Meat's flavor and texture change depending on how it's cooked, but here the staff grill it for you, so we could focus on conversation and eating instead of constantly watching the pan. They flipped it at just the right moment and cut it into bite-sized pieces, so we could enjoy each piece right when it was at its best. Not having to grill the meat yourself is a welcome touch whether it's a date, dinner after work, or a meal with your parents.



Boneless flower pork belly, 150g for 15,000 won
The boneless flower pork belly we tried first was, true to its name, easy to eat while still delivering plenty of pork belly's signature richness. As it browned on the grill, the fatty part melted softly while the surface picked up an appetizing sear. One bite gave a crisp edge followed by juicy, savory flavor all the way through. It was great on its own, but pairing it with the side dishes tidied up the richness so the next piece went down just as easily.



Iberico flower pork neck, 150g for 15,000 won
Compared with the flower pork belly, the Iberico flower pork neck stood out for its firm, meaty texture and deep aroma. It wasn't dry or tough at all — the more we chewed, the more the meat's flavor came through calmly. If the pork belly won us over first with its soft, savory taste, the pork neck balanced things out with a leaner, chewier character. Ordering 150g of each meant we could go back and forth between the two cuts without leaning too heavily on one.


Aged kimchi jjigae and hangover ramyeon at Gildon
The aged kimchi jjigae (stew) we ordered alongside the meat added a satisfying weight to the meal. The deep, spicy tang from well-fermented kimchi refreshed the palate after the meat, and the warm broth made the meal feel that much more complete. Alternating between a bite of meat and a spoonful of the jjigae broth worked really well. It's a good order whether you're pairing it with rice for a full meal or need a hot broth midway through drinks.

Adding the hangover ramyeon at the end rounded the meal out even more. The familiar, spicy broth flowed naturally from the flavor of the meat we'd just eaten, and sharing the chewy noodles made for a fitting finish. Where the kimchi jjigae had a deep, heavy broth, the hangover ramyeon had a more comfortable, familiar charm — so rather than feeling redundant, the two soup dishes rounded out the meal in different ways.

Gildon's owner started out working part-time at a BBQ restaurant and spent about five years learning the business from the ground up. It was striking to hear that, still feeling there's much to learn, the owner prioritizes cleanliness, service, and taste so guests can enjoy their meal. Rather than big claims, the focus on getting the basics right came through naturally in the tableside grilling and the meal itself.

With two of us comparing one flower pork belly and one flower pork neck order, then rounding things off with aged kimchi jjigae and hangover ramyeon, neither the meal nor the finish left anything to be desired.
