Looking for a place to catch up with friends after a long time, I ended up at Yunseul, a shabu-shabu restaurant near Seoul Station ✨ We picked it for the easy access near Seoul Station, and I was really happy with the location inside the Grand Central building — the upscale, clean vibe was great too. As a premium shabu dining spot, the quality lived up to the name too!

It's just a 1-minute walk from Seoul Station Exit 4! Located on the 2nd floor of the Grand Central building, right in front of Seoul Station — honestly the perfect spot logistically for a group meetup. Walk into the building, take the escalator up one floor, and you're there.

The moment you step inside, the huge floor-to-ceiling windows give an incredibly open feeling ✨ Thanks to that view, the whole space feels bigger and more comfortable — I'd recommend grabbing a window seat if you visit.

The tables are spaced generously apart too, giving it a clean, modern, clutter-free feel ☺️ I could totally see why it's popular for dates near Seoul Station, group gatherings, wedding invitation meetups, or even a casual work dinner!

Since there were four of us, we went with the cleanest and most filling combination! After ordering, the table was set up neatly and quickly, packed edge to edge.

The basic side dishes were cabbage pickles and geotjeori (fresh kimchi)! And the sauces — chili sauce, peanut sauce, and gochu-ganjang (chili soy) sauce — are apparently all house-made 💛

We ordered the clear anchovy broth, which they pour in first — you can request extra broth via the tablet ‼️ Since the anchovies are simmered carefully for a long time, the broth has this mild, savory aroma that's amazing...

The spicy stir-fried beef tendon 🌶️ that comes with the set — the chewy texture of the tendon is still there, and the spicy-sweet, smoky sauce soaks all through it, giving it incredible depth of flavor.

Once the clear broth started boiling, they generously dropped in all the prepared vegetables 🥬 Lion's mane mushroom, wood ear mushroom, shiitake, enoki, minari (water celery), napa cabbage, bok choy, bean sprouts — every ingredient at Yunseul is sourced fresh that day, which is probably why the broth tastes so deep.

The longer it boiled, the more the vegetable and mushroom juices exploded into the broth with flavor 💚

I swished the prime chuck roll in the boiling broth briefly and tried it right away — no greasiness, tender without being dry. I wrapped it around some well-cooked bean sprouts and minari, dipped it in the house sauce, and it was pure happiness 💗 You could really taste the meat itself, and the broth wasn't heavy, so it went down light and refreshing.

After picking through most of the meat and vegetables, it was time for the hand-cut noodles I'd been waiting for 🍜 Since it's fresh dough made in-house rather than store-bought noodles, it stayed chewy and springy without going mushy. Top it off with a piece of kimchi and it's a dangerously addictive combo — you just keep eating even when you're already full...

The finale of any shabu-shabu meal is the closing porridge 🤍 We ordered gondre juk (Korean thistle porridge) as our dessert rice. Loaded with fragrant gondre greens, it soaked up all the savory broth and mountain herb aroma — I scraped the bowl clean.
