Today I'm sharing my review of Muhan Paldo Daepae, the all-you-can-eat shaved meat restaurant near Jamsilsaenae Station! I'd been curious about this place every time I walked by, so I finally went for lunch!

Where is Muhan Paldo Daepae Jamsilsaenae Branch?
The all-you-can-eat shaved meat restaurant Muhan Paldo Daepae is right at Exit 3 of Jamsilsaenae Station.

What's on the self-bar at Muhan Paldo Daepae?
As soon as we sat down we went straight for the food haha. There are mushrooms, kimchi, bean sprouts, minari, bracken fern and ham that taste great grilled with the meat, plus ssam vegetables like lettuce, perilla leaves and scallion salad.

Six shaved meats and which cut is which
Han-don daepae (pork), woo-samgyeop daepae (beef brisket), daepae mokssal (pork neck), kkotsamgyeop daepae (flower pork belly), frozen samgyeop — you take as much as you want. Since it's all-you-can-eat daepae, every type of cut is laid out.

- Woo-samgyeop daepae – Thinly sliced beef sirloin. Even lightly cooked, it keeps its juices, and it's the cut that tastes most like real beef when grilled.
- Han-don daepae – Domestic Korean pork sliced into 2mm shavings. Low in fat, clean-tasting and chewy, it soaks up seasoning and the regional sauces well, so it's easy for anyone to enjoy.
- Daepae mokssal – Pork neck sliced thin, keeping its characteristic clean, firm texture. Low in fat and juicy, recommended for those who like a clean flavor.
- Frozen samgyeop – A cut with its own savory flavor and chewy texture. Freezing firms up the meat, so the texture actually gets better the more you grill it, and the more you chew, the more flavor comes through.
- Daepae samgyeop – Pork belly sliced paper-thin, cooking fast with a crispy texture. With just the right amount of fat, it's savory yet light, a popular cut.
- Kkotsamgyeop daepae – True to its name ('flower pork belly'), the marbling spreads out like flower petals. Just the right fat content, thin but full of savory flavor and a crispy bite — a crowd favorite.
Each cut came with an explanation, which made it easy to choose according to taste.

The eight sauces from Korea's eight provinces
Muhan Paldo Daepae has a variety of sauces, one representing each of Korea's eight regions.
- Seoul/Gyeonggi-style signature soy sauce – A subtle savory flavor balanced with sweet and salty notes, easy for anyone to enjoy.
- Chungcheong-style cheonggukjang sauce – The earthy taste of fermented soybean paste with a secret seasoning added for extra depth.
- Jeollabuk-do-style gochujang sauce – The deep flavor of traditional gochujang paste enriched with sweetness and umami.
- Jeollanam-do-style salted shrimp sauce – Deep, rich flavor with a distinctive salty umami kick.
- Gyeongsangbuk-do-style makjang sauce – A refined blend of earthy doenjang and pungent garlic.
- Gyeongsangnam-do-style mustard sauce – Sharp mustard flavor balanced with vinegar and sugar for a clean, refreshing taste.
- Gangwon-do-style perilla-oil soy sauce – Fragrant perilla oil combined with salty soy sauce for a nutty, savory flavor.
- Jeju-do-style fermented anchovy sauce – Jeju's signature sauce, with a subtle anchovy flavor and rich umami.
Each regional sauce came with its own description, so it was fun picking whichever one I felt like trying.

How to make bibimbap with the eight sauces
And there were even recipes for making bibimbap with the regional sauces!
- Gangwon-do perilla oil bibimbap – daepae meat + perilla-oil soy sauce + chopped scallions + dried seaweed flakes
- Chungcheong-do cheonggukjang bibimbap – daepae meat + cheonggukjang sauce + stir-fried kimchi + chopped scallions + dried seaweed flakes
- Jeolla-do Jeonju-style bibimbap – daepae meat + gochujang sauce + seasoned bean sprouts + chopped scallions + sesame oil
With such tasty recipes to follow, I referenced them and enjoyed my meal haha.

How did the woo-samgyeop (beef brisket) taste?
I piled up all the food I wanted to eat and grilled away haha. The woo-samgyeop daepae was so delicious!!!

Han River ramyeon and the dessert slushie
Wow, they even have Han River ramyeon! The soup noodles paired really well with the daepae!! I ate so much and it was so satisfying!

Finished it off with a slushie! Meat, ramyeon and dessert — a truly satisfying meal!
