Kimchi jjigae with oyster mushroom topping in Ansan: Choburi Kimchi
In short
Choburi Kimchi Jjigae Gojan Main Branch is a Korean restaurant in Gojan-dong, Ansan, serving a kimchi stew recipe passed down for three generations. A weekend lunch two-person set (₩28,000) was loaded up with oyster mushroom topping, half a tofu block, and a Bongpyeong buckwheat-chive pancake, simmered down like kimchi-jjim, then finished off with ramyeon noodles and stone-pot rice scorched crust. The spicy pickled pepper side dish from the self-serve bar paired especially well with the stew, and coffee and ice cream after the meal rounded out a very full finish.

After wrapping up trips to Jeju and Busan, I was resting at home on a weekend — and even though I hadn't gone abroad or anything, I was suddenly craving kimchi jjigae. So I went to my favorite kimchi stew spot in Ansan, Choburi Kimchi Jjigae, for a stew packed with meat and kimchi haha.

Where to park?
Arrived at Choburi Kimchi Jjigae. Parking around Gojan-dong is tough by nature, so I used the paid lot next to the restaurant (if you're lucky, you can find street parking out front).

Choburi Kimchi Jjigae follows a three-generation family recipe and makes everything in-house, with a same-day-made, same-day-sold principle.

Nonstop customers during weekend lunch at Choburi Kimchi Jjigae. I've rarely seen a kimchi jjigae place fully booked like this — it really is a Gojan-dong, Ansan favorite.

You just let it bubble away on the induction burner built into each table.

Good to know how to eat it right ★ They also sell meal kits. The kit is cheaper, so it might be nice to make this at home too.

Self-bar and side dishes
The self-bar. If you run low on rice or sides, feel free to grab more yourself. There's even a refill kettle for the broth haha.

Spicy pickled peppers and stir-fried fish cake. These sides go so perfectly with kimchi jjigae — and honestly, the pickled peppers at this Gojan-dong, Ansan favorite are seriously amazing...

Side dishes and seaweed set out.

The 2-person kimchi jjigae set with oyster mushroom and tofu added
Choburi's kimchi jjigae arrived. With half a tofu block and oyster mushroom added, it was an even more generous pot.

The perilla oil fried egg, which pairs perfectly with kimchi jjigae, came out too. I don't think there's a single Korean out there who dislikes the fried-egg-plus-kimchi-jjigae combo!

At Choburi, even the rice comes in a stone pot. Turmeric stone-pot rice, healthy and tasty at once.

The key: simmer it down like a kimchi-jjim
After boiling away, the kimchi jjigae basically turned into a kimchi-jjim (braised kimchi dish). They said Choburi's stew tastes better eaten more like a braise than a soupy stew.

Started with the mushrooms and tofu — yum yum. The mushrooms, soaked through with the seasoning, were especially good.

The pizza-large-sized Bongpyeong buckwheat-chive pancake
Right as the jjigae finished cooking, the buckwheat-chive pancake showed up. This thing was pizza-large size... I had no idea it'd be this big. Eating it with the pickled pepper side is heaven. I saw another table pairing it with makgeolli and really wanted to order some too, but I held back ㅠ_ㅠ

After eating some of the good bits, added a serving of ramyeon noodles. Not adding ramyeon noodles to kimchi jjigae should honestly be a crime. Mixed it all up with rice — noodles, kimchi, and all that meat — and it was so good.

Finishing with stone-pot scorched rice, coffee, and ice cream
Even full, you can't skip the stone-pot scorched rice. Topped with pickled peppers or kimchi from the stew, this is truly a special treat.

You can also have coffee for dessert. A nice perk — there's a choice of Americano or instant mix coffee.

And to top it off, ice cream for a palate cleanser. No matter how full you are, one bite of ice cream is non-negotiable. With all the extra noodles piled on too, this was such a delicious meal at Choburi Kimchi Jjigae, the Gojan-dong favorite — if you're eating kimchi jjigae in Ansan, it has to be Choburi Kimchi Jjigae!!!!
