The biggest strength of Snug Roastery is really that dedicated grilling service — a staff member grills the meat for you from start to finish. Maybe that's why there was no trace of the dryness pork jowl can have; instead it had this springy bite between your teeth that was just excellent. Every chew released savory, clean juices along with a deep charcoal aroma that filled my whole mouth.
