Busan Korean BBQ restaurant for fresh pork ribs: Gilchon Sutbul Galbi
In short
Gilchon Sutbul Galbi Seomyeon Main Branch is a Korean barbecue restaurant in Busanjin, Busan, serving charcoal-grilled fresh and marinated pork ribs. We started with fresh ribs, then moved on to marinated ribs with meljeot, pickles, and grilled potatoes; the inexpensive draft beer and free corkage stood out too. For the full appeal of fresh pork ribs, Gilchon Sutbul Galbi Seomyeon Main Branch is a recommendation.

Gilchon Sutbul Galbi Seomyeon Main Branch One platter of fresh pork ribs (500g, ₩29,500) One platter of marinated pork ribs (500g, ₩29,500)
After stopping by a dermatology clinic in Haeundae, I headed straight to Seomyeon. My mom said she would buy me something delicious. They said the owner trims the pork ribs personally, so I picked this place thinking the pork would obviously be fresh and tasty.

A polished pork-rib restaurant near Seomyeon and Bujeon Stations
It is close to both Seomyeon Station and Bujeon Station, so getting there is very easy. The exterior feels upscale, while the inside is very clean with pretty lighting—great for a date. I hear people also come here for small wedding-invitation gatherings.

How much are the fresh and marinated ribs?
A platter of fresh pork ribs is ₩29,500 for 500g or ₩47,000 for 800g. Marinated pork ribs are the same: ₩29,500 for 500g and ₩47,000 for 800g. At about ₩5,900 per 100g, it is a great-value meat spot. Often, places with inexpensive meat charge a separate table-setting fee, but there is no such fee here. You can also add a half portion.
I really liked that the marinated and fresh pork ribs cost the same. Marinades are often more expensive, but here they are priced equally, so you can choose whatever you prefer without worrying about the price.

For meal items, there is dried shrimp doenjang-jjigae (soybean-paste stew) for ₩2,900, kimchi jjigae for ₩3,900, a bowl of rice for ₩900, and cheese fried rice for ₩5,900. Every price ends in 900 won, which somehow feels like getting a 100-won discount—nice!

Free corkage and ₩1,900 draft beer
One unusual thing: free corkage. I do not think there are many corkage-free restaurants in Seomyeon, yet this barbecue restaurant offers it. They say barbecue restaurants usually make their money on alcohol, so I wondered how that was possible—but perhaps they are that confident in their meat. The draft beer is cheap too: ₩1,900 for a 300cc glass. How could you not order draft beer at that price?

Pickles and barley white kimchi among the banchan
The basic side dishes were seasoned scallion salad, pickled garlic stems and chili peppers, and potato salad. There were mushrooms in the pickles too, and the pickles were honestly the best banchan (Korean side dish). Their tanginess went perfectly with the rich food.

The white kimchi was unusual too. Whole barley grains were scattered over it, adding a nice chew. Wasabi and salted seafood also added saltiness and savoriness; that salted seafood was meljeot, a fermented anchovy sauce.

A 300cc glass of draft beer is ₩1,900. Cold draft beer is the best. With beer this unbelievably good value, I would not regret passing up the free-corkage opportunity at all.

Start with fresh pork ribs before moving to marinated ribs
One platter of fresh pork ribs (500g) is ₩29,500. We started with a half portion of fresh ribs! Since the grill is different, I recommend eating the fresh pork ribs first, then moving on to the marinated ones. The rib meat had been sliced into portions that were just right to eat, and the cuts in the meat gave it a good texture too.

You can grill potatoes and scallions alongside the meat. The potatoes browned beautifully in the pork fat and tasted a little like potato pancakes or fries, which I loved. The grilled scallions had a pleasantly sharp flavor and were a perfect match for the fresh pork ribs!

It was my first time eating this pork-rib cut fresh like this. The fatty parts melted over the charcoal and became wonderfully nutty, so I could really appreciate the texture of the pork even more. Anyone who likes samgyeopsal (pork belly) will definitely like it; the charcoal aroma sinks in while the fat drips away underneath, which is so appealing.
Simmered down until thick, meljeot suited the fresh pork ribs in a way that was different from samgyeopsal, while the soy sauce served alongside suited the marinated ribs. Personally, I really recommend trying the fresh pork ribs here. You can fully experience what makes the pork-rib cut special.

Marinated pork ribs that are neither sweet nor salty
After the fresh pork ribs, we moved on to marinated pork ribs. This was a large platter: 800g of marinated pork ribs for ₩47,000.

The marinated pork ribs come with mushrooms and shishito peppers. Keep an eye on them and turn them often before the gently sweet soy marinade burns! The seasoning was perfectly balanced—not overly salty or sweet. Pork ribs can often be so sweet and salty that you tire of them quickly, but these were seasoned just right.

They are even better wrapped in lettuce with scallion strips and wasabi. You can get more from the self-service corner, so eat as much as you like.
Dried shrimp doenjang-jjigae (soybean-paste stew), ₩3,900. It was packed with dried shrimp, and the stew was not overly salty, so it was not harsh. Rather than the thick, stew-like kind you mix with rice, it was a light soup to cleanse your palate at the end.
If you are looking for a good meat restaurant in Seomyeon, I would recommend it. The restaurant is clean, and the meat is truly fresh and delicious. It is not a barbecue place that grills for you, so whoever is cooking may be a little busy while eating—but the meat is such good quality that even that feels like part of the fun.
