Incheon sashimi restaurant for late nights: Veteran General Fish Market

In short

Veteran General Fish Market Incheon Guwol Branch is a sashimi restaurant in Namdong, Incheon. After work, my partner and I had the two-person halibut and rockfish set, fried squid, and a DIY kimchi pancake. A good choice for sashimi and drinks late into the night.

Lately, the breeze in the mornings and evenings has turned pleasantly cool—it really feels as though full-fledged autumn is here. Whenever the seasons change, I get oddly excited and want to lift my spirits with something delicious, you know? So my beloved partner and I made plans to have a lovely dinner out together after work for the first time in a while.

Dinner after work

We put our heads together and seriously debated what would both replenish our energy and fill our mouths with happiness. Then, suddenly, fresh, chewy seasonal live-fish sashimi flashed through my mind. No more deliberating—we immediately opened our phones and started searching like crazy for great sashimi restaurants in Guwol-dong.

After carefully comparing countless reviews and visitor posts, we found a place said to have not just great flavor, but value for money and a special atmosphere too. Our choice was a warmly situated restaurant along Inha-ro 507beon-gil in Namdong-gu, Incheon.

Once we arrived and slipped inside, it was much larger than I expected. The group seating was really well arranged too, so it looked perfect for gatherings.

One thing I especially loved was the generous, relaxed opening hours. They open early at 11 AM every day and stay open until 3 AM the following morning, making this a perfect place to leisurely enjoy live-fish sashimi and drinks even late at night, without watching the clock.

Spacious Group Seating and a Comfortable Interior

We arrived full of anticipation and stepped inside, only to be surprised by how much larger and more comfortable it was than it appeared from outside. The tables were generously spaced, so it never felt cramped, and the group tables and private spaces were exceptionally tidy and well prepared. I immediately thought it would be an excellent choice for a company dinner, family gathering, or large club meetup—the kind of place that would earn compliments from everyone you brought along. The overall clean, well-maintained feel was very reassuring too.

Two-Person Halibut and Rockfish Set with DIY Kimchi Pancake

There were so many kinds of live-fish sashimi and seafood side dishes that we deliberated for a while, then ordered the fresh two-person halibut and rockfish set—the classic foundation of any sashimi restaurant. Sashimi alone felt like it might be a little lacking, so we also added crispy fried squid, the very definition of crunchy outside and tender inside.

After ordering, we headed to the self-service bar for wrap vegetables and sauces. Uniquely, this place also had a thoughtfully prepared DIY kimchi pancake batter station where guests could make their own pancake!

We couldn't just pass up such a fun feature, right? We set a clean frying pan on the gas burner, poured in plenty of cooking oil, and heated it up. Then we ladled out a generous scoop of red, delicious-looking kimchi pancake batter, spread it wide and thin, and began flipping it until both sides were golden and crisp. Living up to my self-proclaimed and widely acknowledged title as our household pancake master, I even timed the flip perfectly and completed a spectacular-looking kimchi pancake! It was piping hot, crisp around the edges like a cracker, moist inside, and wonderfully spicy and savory. My partner devoured it and declared total satisfaction, haha. It was such a happy start: a little fun and good food before the main dishes even arrived.

We happily returned to our table carrying our homemade kimchi pancake, and the staff carefully set out a neat, harmonious spread of basic banchan (Korean side dishes). From golden grilled Pacific saury with its nutty aroma to fresh side dishes that awakened the appetite, the table was soon full. One especially distinctive touch here was that they served myeongnanjeot (salted pollock roe) as a basic side dish to enjoy in wraps. The thought of richly savory, salty pollock roe with fresh live-fish sashimi had my heart racing before I even tasted it.

Crispy Fried Squid and Chewy Live-Fish Sashimi

Freshly fried, golden squid arrived at the table with steam still rising from it. The batter had such a clear, lovely color that it seemed they used clean oil. The moment I took a bite, there was that cheerful crunch! The outside was cracker-crisp, while the squid inside was moist and tender—the textbook crunchy-outside, tender-inside combination. Its nutty, rich fried flavor filled my mouth and had me practically drooling.

Then at last, the main star we had been waiting for appeared in grand fashion: a sashimi platter of glossy, luminous halibut and rockfish! Its powerful presentation and ultimate freshness drew exclamations from us—just what you would expect from a Guwol-dong sashimi restaurant praised by locals among Incheon's many options. I picked up a piece of pearly white halibut and reddish rockfish and ate them without sauce. The texture was remarkably chewy and springy, almost like carefully aged sashimi. The more I chewed, the more the delicate, lightly sweet umami of live fish spread pleasantly across my tongue.

In the end, with such wonderful drinking snacks in front of us, it felt criminal to hold back, so I ordered the cold soju and beer I had resisted for eight days for the sake of my health, haha. As the chilled drinks went down my throat for the first time in a while, it felt as though all the fatigue in my body simply melted away.

Sashimi Topped with Salted Pollock Roe

I tried the house's signature winning combination: a little myeongnanjeot on a piece of sashimi, with chili pepper. It brought a deeper, fuller wave of umami and flavor than the usual wasabi soy sauce or chojang (sweet-and-tangy red chili dipping sauce). The saltiness of the roe seemed to maximize the sashimi's sweetness. Dipping the fish generously in their homemade, earthy makjang (fermented soybean chili paste), then wrapping it in perilla leaf with garlic, was absolutely heavenly too, and my hands never stopped moving. I could only quietly nod as I experienced firsthand why so many people praise this as an Incheon sashimi spot. If you visit after reading this, I very, very strongly recommend trying this unusual and charming combination at least once! 💕
