Gang Galbitang Seomyeon✨, a galbitang (short rib soup) restaurant in Seomyeon, Busan, simmers Korean beef bones every morning. It's been unusually windy lately, so I stopped by craving something hot. Just a heads up — if you use the Blue Parking Lot right next to the restaurant, you get 30 minutes supported with a 2-hour meal. They also do mealkits and takeout, so it looked great for eating comfortably at home too. It was interesting to see customers of all ages, including a lot of foreign visitors.

Gang Galbitang Seomyeon✨ has plenty of tables where you can eat solo, so it looked great for anyone doing a solo meal in Seomyeon. Even though it was a weekend lunch and packed, turnover was fast so I got my food quickly. When you walk in, staff will guide you through either the kiosk or the counter, so you can order however you like. There's an indoor restroom too. Just a note — if you order 4 or more mealkits, shipping is free nationwide.

Self-bar side dishes and free coffee after the meal

They bring out side dishes at first, and if you need more, you can refill at the self-bar. I tried chojeokjam (Chinese artichoke) pickles for the first time, and my boyfriend loved them, saying they were fresh and tasty. At Gang Galbitang Seomyeon✨ you can also enjoy coffee after your meal — it was fun that they had a separate coffee machine. Oh, and mumallaengi (dried radish) doesn't come out by default, so if you want it, grab it from the self-bar. The kkakdugi (radish kimchi) paired perfectly with the galbitang.

With bean sprouts and radish, the spicy galbitang at Gang Galbitang Seomyeon✨ is great for a good kick of heat. You can add Jeju jungmyeon noodles for ₩2,500. It comes with glass noodles as a base, so it's filling enough on its own. The broth was really spicy, so it seemed perfect for curing a hangover — if you're sensitive to spice, I'd steer clear. Mixing rice into it made it a hearty, gut-warming dish.

At Gang Galbitang Seomyeon✨, the rib meat is so tender it falls right off the bone. It was great even just dipped in the basic soy vinegar sauce that comes with it. The spicy galbitang has plenty of heat baked right into the broth, so it's good on its own too. The jungmyeon noodles were so good that I want to try the rib noodle dish next time. Since the jungmyeon is shipped directly from Jeju, it tasted even better. Adding jungmyeon on top of the glass noodles, plus rice — totally filling! The portion of meat per bowl was huge too, so I got really full.

I ordered the most basic option, the regular galbitang at Gang Galbitang Seomyeon✨. The broth already comes seasoned, so I'd recommend tasting it first before adding the seasonings on the table. I usually always add pepper, but this one was already savory enough that I only sprinkled a little at the end. The broth is rich and deep, so be careful — you'll end up eating with real enthusiasm. It was exactly the kind of warmth you want on a windy day. I'm not usually someone who drinks a lot of broth, but this one was so good I kept going back for more. I like my food on the plain side, and eating it with rice made the seasoning feel just right.

Glass noodles and short ribs, and why rib noodles are next

At Gang Galbitang Seomyeon✨, the glass noodles that come standard add good texture and flavor. The rib meat itself is so tender it just slides right off the bone. Scissors and tongs are provided, so I cut it into bite-sized pieces. After working through the broth, I ended up mixing rice in near the end. They also have a separate galbi-guk-bap (rib soup with rice) menu, so it seems like a perfect spot for a solo meal in Seomyeon. Next time I want to try the rib noodles, which come with a mini bowl of rice on the side — I think I'll be back.
