One dish you really have to try when you're in Busan is milmyeon (wheat noodles). There are so many famous milmyeon spots in Busan that it's hard to decide where to go, so this time I visited Seomyeon Milmyeon, a place that's been loved in Seomyeon for a long time.

Kiosk ordering: how fast does the food arrive?
At Seomyeon Milmyeon you order through a kiosk. You look at the menu, pick what you want, and pay right away, so the process is simple and quick. During busy hours ordering could take a while otherwise, but with the kiosk the turnover felt fast.


The food also came out surprisingly fast after ordering. Milmyeon isn't a dish that requires a long wait to begin with, so even showing up hungry, there was barely any waiting to tire me out. I took one sip of the warm broth and the food arrived right after.

Milmyeon piled with beef brisket in slushy, half-frozen broth
The milmyeon that finally arrived looked refreshing just to look at!! Slush ice floats in the broth, sauce and toppings sit on top, and a generous pile of beef brisket is layered over it all. The clean flavor of the meat went really well with the sweet and tangy sauce of the milmyeon. Before eating, it's important to mix the sauce well into the broth.

How to mix the sauce for the best bowl at Seomyeon Milmyeon
When it first arrives, the sauce sits clumped on one side, so eating it as-is can make the flavor feel uneven bite to bite. Once you use your chopsticks to loosen the noodles and mix the sauce evenly into the slushy broth, that's when the real flavor kicks in.
At first, the cool, sweet-tangy flavor comes through, but as you keep eating a slight spiciness follows at the finish. It's not too spicy or harsh — just a mild heat that lingers pleasantly, which kept my chopsticks moving. As the slush ice slowly melts and blends naturally with the broth and sauce, the flavor gets even smoother, and the chewy texture unique to milmyeon noodles really shines when slurped with the broth. It looks similar to naengmyeon (cold buckwheat noodles), but once you actually eat it, the noodle texture and broth flavor of milmyeon are clearly different — definitely worth trying at least once if you're in Busan.

Are Seomyeon Milmyeon's dumplings worth adding?
Milmyeon alone felt like it wasn't quite enough, so I also ordered the dumplings at Seomyeon Milmyeon. Personally I like ordering dumplings alongside milmyeon — alternating between the cold, tangy noodles and a warm dumpling is a really good combo.


Biting in, rather than tearing softly, the wrapper had a slight springy, chewy bite, and the filling inside was moist, making it good to eat alternately with the milmyeon.
Kiosk ordering was convenient and the food came out quickly, so it was easy to stop by in the middle of a day of sightseeing, and above all the combination of the icy broth and the sweet-tangy sauce was satisfying. I could kind of see why it's caught on among foreign tourists too.


It's not a flashy or complicated dish, but I could really feel the charm unique to Busan milmyeon — the cool broth, chewy noodles, and shredded brisket all coming together. Try mixing it the way I described and enjoy Busan milmyeon to your own taste!!

Does Seomyeon Milmyeon fit an autumn day out in Seomyeon?
Seomyeon Milmyeon is right in the middle of Seomyeon, so it's easy to get to, and it's popular not just with locals but with travelers too. Lately it seems to have caught on with foreign tourists as well. When I visited, foreign customers were mixed in naturally among the Korean customers, and it was interesting to see that milmyeon, one of Busan's signature foods, has become known to foreign visitors too. I feel like a lot of foreign travelers eat plenty of dwaeji gukbap (pork bone soup) or seed hotteok when visiting Busan but are still unfamiliar with milmyeon — but it seems like milmyeon has now settled in as one of Busan's representative tourist foods as well.
It has a strong image as a summer specialty, but personally, milmyeon eaten while walking around Seomyeon on a cool fall day was really good too. You can take your time exploring Seomyeon without getting worn out by heat, then enjoy a cool bowl of milmyeon afterward, which makes it fit well as part of a fall Busan trip. If you're wondering what to eat in Seomyeon, try mixing the sauce well into the slushy broth and enjoy a sweet, tangy, slightly spicy bowl of milmyeon along with the chewy dumplings.
