24-hour Uijeongbu café for apple ade and rooibos: Forerest

In short

Forerest is a large forest-side café on Nogyang-ro in Uijeongbu, Gyeonggi. I paired matcha and chocolate Basque cheesecakes with apple ade and rooibos, then relaxed in the spacious parking area and outdoor terrace. Verdict: a lovely spot for an unhurried cake-and-tea break.

At Forerest, a large café in Uijeongbu that stays open until midnight, I tried the matcha and chocolate Basque cheesecakes. Below, I’ll tell you all about this large Uijeongbu café and go through the menu I had one by one!

What kind of café is Forerest in Uijeongbu?

Forerest, a large café in Uijeongbu, is tucked into the woods, just as its forest-evoking name suggests. The deeply green scenery around the café was truly charming.

When I visited in winter, the cool-toned scenery stayed with me, but coming back in late summer, the lush green view felt completely different.

Perhaps because the weather has noticeably cooled down lately, plenty of guests were sitting on the outdoor terrace too. Forerest is a large pet-friendly café in Uijeongbu, so if you’d like to relax with your pet, I hope you’ll visit the Forerest I’m introducing today.

Basque cheesecake and what I ordered

There are many menu items, including Forerest’s signature Basque cheesecakes, and I ordered the matcha and chocolate versions along with apple ade and rooibos tea!

Forerest makes its Basque cheesecakes in-house and ages them for at least 16 hours, so they looked like they couldn’t possibly be anything but delicious. Let me start with the cheesecakes.

How was the matcha Basque cheesecake?

The matcha Basque cheesecake would be right up your alley if you usually enjoy matcha Greek yogurt.

There was nothing artificial or overdone about it—just the naturally bitter flavor of matcha. Perhaps because it had been aged for so long, I fell for its dense texture, like yogurt with all the whey pressed out.

I love matcha’s bittersweet edge, so Forerest’s matcha Basque cheesecake was exactly to my taste.

If you prefer matcha with a stronger sweetness, like Baskin-Robbins Green Tea, keep the pairing below in mind.

The chocolate Basque cheesecake was less sweet

The chocolate Basque cheesecake was wonderfully dense too. Its chocolate flavor, like a refined dark chocolate, balanced sweetness and bitterness beautifully.

So even though it was a chocolate cake, it wasn’t overly sweet; even my husband, who doesn’t like chocolate cake, enjoyed every last bite.

The rich chocolate flavor lingers in your mouth and softens the usual cream-cheese note of Basque cheesecake, so even people who normally dislike cheesecake may enjoy this one.

By the way, if matcha’s bitterness feels a little daunting, try having it with the chocolate Basque cheesecake. It is sweet and slightly bitter together, like a chocolate forest.

The apple ade and rooibos pairing

For a drink with the Basque cheesecake, I chose apple ade. I loved its strong, sparkling refreshment, almost like beer made from apples.

Its tangy, lightly sweet flavor filled my mouth, and it felt like drinking freshly pressed apples.

Refreshing apple ade

After a bite of dense Basque cheesecake, a sip of apple ade refreshes your richened palate, making it a great pairing with the cake!

The menu separates caffeinated and caffeine-free teas, which made choosing easy for someone caffeine-sensitive like me. I chose rooibos, which is also well known as a tea for pregnant people.

Caffeine-free rooibos tea

After steeping the leaves for a long time, rooibos’s naturally nutty flavor came through richly, with a gentle freshness lingering at the end. I thought rooibos also paired beautifully with the dense cheesecake.

And when you order tea at Forerest, it comes with both a teacup and a teapot, so you can steep it to your preference. If you’d like a warm cup of tea in the cooler autumn weather, I hope you’ll give Forerest a try.

When you want to rest in a spacious forest setting

That was my review of Forerest, a large café in Uijeongbu. True to its size, the parking lot was spacious, and the whole property is filled with woods, so every visit to Forerest has felt restorative. The cakes and drinks were delicious too, which made me even happier. The staff were kind, and there are plenty of tables both indoors and outside, so if you want to relax at ease on a weekend without waiting, I hope you’ll visit Forerest.
