I got lunch to go from Yangjae Katsu, a well-known spot near Yangjae Station. Comparing loin katsu, fillet katsu, and cheese katsu

The loin katsu (rosu katsu) is tender thanks to a perfect balance of fat and lean meat, the fillet katsu (hire katsu) is light and nutty with no fat, and the cheese katsu has an over-the-top look with mozzarella cheese overflowing out of it.

Cross-section of Yangjae Katsu's donkatsu

All three — fillet katsu, loin katsu, and cheese katsu — are so good it's hard to pick a favorite, so I'd recommend ordering a mixed combo like I did to try a couple of kinds.

Stretchy mozzarella cheese katsu

My personal recommendation is the cheese+fillet or cheese+loin combo. Cheese katsu is one of Yangjae Katsu's signature dishes, and it's the best cheese katsu I've ever had. There's a reason it's the signature — the nuttiness is incredible, like 'so this is what real mozzarella cheese donkatsu tastes like.' After only ever eating chain-store cheese donkatsu, I'm so happy to have found an independent restaurant near Yangjae Station that does cheese donkatsu properly.
