Hets is my go-to tonkatsu spot in Jeonpo whenever I'm craving hire katsu (tenderloin cutlet)! I'm normally a loin cutlet (rosu katsu) person, but Hets does hire katsu so well that it's the only thing I order there now.

The interior has a clean, modern look with stainless steel, black, and gray tones. The restroom is through the storage door you see in the photo, further inside — it was clean too, which I appreciated.

Hets' menu is split between Jeju black pork and YBD. Y (Yorkshire), B (Berkshire), and D (Duroc) are three-way crossbred premium pigs — apparently the clean flavor of white Yorkshire pork, the chewy texture of Berkshire, and the soft, savory richness of Duroc come together for a deep flavor. Besides tonkatsu, they also have rosu sando and hire sando (cutlet sandwiches), worth keeping in mind!

This time I ordered the YBD hire katsu for two at Hets Jeonpo Branch. The restaurant recommends a specific order for eating it.

If you look behind your seat, there's a poster — police officers, national merit recipients, soldiers, firefighters, high school seniors preparing for exams, and pregnant women can choose one of: meat curry, 2 pieces of boneless gara-age, or a drink. Good to know!

Spicy soup and the open kitchen that drains the oil

Since the cutlets are fried fresh to order at Hets, you first get miso soup, rice, tonkatsu sauce, and kkakdugi (radish kimchi). Hets' miso soup is a bit spicy! I'm a spice wimp so it's spicy for me, but my boyfriend loves it. He said he could finish a whole bowl of rice with just this, haha.

It's an open kitchen, so you can watch them shake off the oil right after frying, then stand it upright to drain further before slicing and serving. It takes a little while for the food to come out, but knowing it's for that signature Hets flavor makes the wait enjoyable. It really is that good!

It comes with pink salt, a little mustard, and cabbage salad. The sauce is on the table, so drizzle on as much as you like.

How does the YBD hire katsu taste with truffle oil and wasabi?

Following the recommended order, even eaten plain there's a light, savory meaty aroma (definitely not any off-putting gamey smell!!!) — crispy on the outside, juicy and tender on the inside, a hire katsu packed with flavor.

Dipped in the tonkatsu sauce it's delicious too, blending nicely with the sauce, but personally I found mixing a little wasabi and truffle oil into the sauce made for another great combination! The sauce is tangy, and the truffle oil softens that tanginess slightly while the wasabi brings out a clean finish.

What I love about Hets is that even eating slowly, the tonkatsu doesn't dry out — it's moist from the first bite to the last. With tonkatsu, eating slowly often means the juices dry out and it gets plainer as you go, but Hets keeps the flavor consistent throughout, which I really appreciate since I tend to eat slowly!

Corn-based cabbage salad sauce and what you can refill

Hets' cabbage salad sauce is also really good. It's a corn-based sauce that's sweet and savory, pairing really well with the tonkatsu. I ran out and asked for more, and happily ate seconds. Rice, kimchi, miso soup, and salad can all be requested for refills anytime, keep that in mind! If you want silbi kimchi, you can get that too!

After paying, they even gave me a coupon! They offered candy too, but I only took the coupon.

Is Hets Jeonpo Branch worth another visit?

Honestly, this is the best hire katsu I've ever had, and it kept that same great flavor throughout — 100% intent to keep visiting regularly! The staff were all friendly too.

If you're looking for a truly delicious hire katsu spot in Jeonpo, I'd recommend Hets without hesitation. Everyone, please go try Hets!!!! Everything there is amazing.
