If I had to pick the hottest neighborhood these days, Hipjiro would absolutely be on the list. Its lane after lane of distinctive retro atmosphere blended with modern sensibility makes it somewhere I often choose for meetups, too.

Among them, Eulji Baektan Ppyeogui (을지백탄뼈구이) sets itself apart with a distinctive fire-kissed flavor, using only baektan (premium white charcoal), considered the finest type of hardwood charcoal.

I had already heard all about the reputation of Euljiro grilled bones and had wanted to visit for ages, so I was finally able to go in person this time.

One of Eulji Baektan Ppyeogui's biggest advantages is its access to the subway. I had gone to Jongno 5-ga to buy medicine, then strolled over for some exercise—and it is literally a one-second walk from Exit 11 of Euljiro 3-ga Station! Step outside and the Euljiro grilled-bones restaurant is right there.

If you visit without a reservation, the wait can be long, so during peak dining hours I recommend making a Catch Table reservation as soon as you arrive. Reservations through Naver Booking and Catch Table are well set up, saving you the trouble of standing in a long line.

I visited around 4 p.m., when there were still plenty of seats, but while I was eating, a constant stream of guests quickly filled the first floor.

There is a private room for 4 to 8 people and a floor-seating group table that can accommodate up to 20, so keep that in mind.

Grilled bones and side dishes
Grilled bones are the specialty, but beef brisket udder cartilage, grilled cuttlefish, and bone gamjatang (pork-bone potato stew) are also main dishes.


There are also a potato pancake and fried cuttlefish, which really create great synergy when eaten alongside the main dishes.


As a wine lover, I was also happy to see that corkage is allowed: ₩20,000 per bottle for wine or whisky. Next time, I should bring a bottle of wine to have with the food.

They give you bottled water outright, which felt more hygienic.

The banchan (Korean side dishes) were kept simple, with just three carefully chosen essentials.


The cabbage salad, rinsed aged kimchi, and pleasantly crisp, nicely fermented kkakdugi (cubed radish kimchi) were all delicious.

White-charcoal aroma and tender meat on the grilled bones
At last, the grilled bones I had been waiting for arrived in a generous spread. Euljiro is packed with meat restaurants and beloved old-school spots, but grilled bones are a truly special dish that is not easy to find.

Large whole green onions were grilled too and served as a garnish, immediately catching my eye.

When I lifted one grilled bone with the tongs, it was quite large and weighty. It was generously coated in a coarse minced-garlic seasoning, and a gentle charcoal aroma had deeply seeped between the tender pork bones.

It had been cooked moist and tender over the intense heat of white charcoal, so the meat came away from the bone easily with only the lightest touch of chopsticks.

Look. The bone slips right out this easily.

How spicy is it?
You can choose the spice level of the sweet-and-spicy house sauce from 1 to 4, and even the level 1 I chose had a mild kick as a baseline. Level 2 is about as spicy as Shin Ramyun, level 3 is at the level of Buldak 볶음면 (fire chicken noodles), and level 4 is very hot—so everyone from people who cannot handle spice to heat lovers can choose what suits them.


The grilled green onion served alongside was a delicacy in its own right, with a subtle sweetness that made it great with the Euljiro grilled bones.
If you want to experience meat with truly rich meatiness and charcoal aroma around Euljiro, Myeong-dong, or Jongno—not just another ordinary meat restaurant—I recommend Eulji Baektan Ppyeogui. I loved the thoughtfully composed menu, but the staff were incredibly kind as well, and the convenient location made this a thoroughly satisfying meal.
