A tiny, prized pork cut similar in shape to tuna belly, cross-aged for 20 days — the pork shoulder set is known for its rich fatty flavor and chewy texture.

The set comes with Gwanaksan egg soufflé and either doenjang (soybean paste) stew or aged kimchi stew, so it's quite filling.

Today's mission: Sharosu-gil near Seoul National University Station on subway line 2 ~ spent a delicious time with a special Korean pork cut.

How do the cross-aged pork shoulder and diced pork neck taste?
The pork shoulder set comes with cross-aged shoulder cut and diced pork neck (mokjal). The shoulder is fresh and high quality, while the neck comes out cut into big cubes, true to its name.
They put the leaner diced pork neck on the grill first
If a flare-up happens, don't panic — there's a small water container on the table, just splash it on the edges
Thick cuts mean a chewy texture, with a clean but savory flavor
Meat lettuce wraps with the spicy green onion shreds are always a good choice

The right amount of fat keeps it from drying out, the charcoal aroma brings out the savory flavor, and the chewy texture makes it satisfying to chew

Dip it in the sauce and coat it in breadcrumbs for a fun texture that's tonkatsu-ish, but not quite

Wrapping it with seasoned kim (seaweed) also gives it a different flavor

Gogigupneunsaramdeul's charcoal-grilled rice ball is ₩3,500, with flying fish roe topping for ₩1,000 more. You shape the rice ball yourself and grill it over charcoal.

Charcoal-grilled rice ball~ the name was so intriguing I had to order it. Oh~ so you just knead and knead to shape the rice ball, then grill it.

It can burn, so grab some sesame oil from the self-serve bar and brush it on for a nuttier flavor and better grilling. The outside turns golden and crispy like nurungji (scorched rice), nutty flavor and all~ great idea, honestly

Finally, the owner's thoughtful touch — a yogurt drink after the meal~~ ended things on a sweet note ❤️❤️
